Fujian Gutian Chengjiu produces red yeast rice, the grain fermented with Monascus purpureus that serves both as a natural red colourant and as a starter culture. Output is graded by colour value, running from 1,000 to 7,000 u/g, which covers pigment-strength material as well as the lower grades used in rice wine brewing and vinegar making.

The company works at Gutian in Ningde, Fujian, at a scale it puts at 5,000 tonnes a year of high colour-value red yeast rice. It has filed an invention patent covering a Monascus culture medium and the preparation process that uses it, alongside eight utility model patents, gained its own export licence in 2017 and passed ISO certification in 2021.
