Fuzhou Longlixin Biological Products ferments red yeast rice. It makes the rice itself in granule and powder form at high colour value, and separates from it the two Monascus colours listed here, monascus red and monascus yellow.

The company works from Jiangnan in Lianjiang County near Fuzhou, Fujian. It grows the Monascus strain it calls 116 on rice by solid state ventilated fermentation, then extracts and purifies the pigments, combining traditional koji practice with modern separation. Monascus red goes into meat products and sauces, monascus yellow into confectionery and drinks, and the fermented rice into brewing and traditional foods.
