Bone marrow essence cream is a paste form savoury flavour base made by extracting and concentrating the marrow and soluble fraction of livestock bone, usually with an enzymatic hydrolysis step and a controlled Maillard reaction. In the Chinese seasoning trade it belongs to the family of thermal process flavours sold as extract creams, where a viscous concentrate rather than a powder is the traded form.

Its function is depth rather than lift. The hydrolysed protein fraction supplies free amino acids and small peptides for umami and kokumi, the marrow fat carries species specific meatiness, and the reaction step between those amino acids and reducing sugars generates the roasted, long simmered notes that a plain broth lacks. It is dosed at a fraction of a percent up to a few percent of a finished seasoning, and it is normally paired with separate top note flavours because its own volatiles are heavy and low.

The material is a light to dark brown viscous paste that stiffens when cold and thins on warming, so drums are tempered before dispensing. Common Markets Grades

Grades are defined by species and by the intensity of the reaction step. Pork, chicken and beef marrow bases are the main lines, with pork the largest in Chinese production. Within each species, a mildly reacted grade preserves a clean broth character and is used where the finished product should taste boiled, while a heavily reacted grade carries roasted and grilled notes and is used in barbecue and stir fry seasonings.

Solids content, fat content and salt level are the other specification axes. High solids pastes above seventy percent are shipped where freight cost matters and are salt preserved, while lower solids grades are refrigerated. Some lines are standardised on total nitrogen or amino nitrogen so that buyers can dose on measured umami contribution rather than by weight. Spray dried powder versions of the same base exist, but the cream is preferred where the fat carried character is the reason for buying it, since drying costs part of that fraction. Regulatory Status

Products of this type are regulated as thermal process flavours or as natural flavourings, not as food additives, so they carry no E number. In the United States a reaction flavour built from permitted food ingredients is treated as a flavouring, and the substances used in it must be GRAS or otherwise permitted for flavour use; the animal derived starting material brings the manufacture under the meat and poultry inspection framework of the Department of Agriculture, and the species must be identified on the label.

In the European Union thermal process flavours are a defined category within Regulation 1334/2008, which sets the production conditions, including limits on reaction temperature and time, under which such a flavouring may be produced without individual authorisation, and lists the classes of starting material permitted. Establishments producing an animal derived ingredient must additionally be approved under the hygiene regulations for products of animal origin, and consignments require the corresponding veterinary health certification. Bovine grades are constrained by specified risk material rules in many markets, which is one reason porcine and poultry marrow bases dominate international trade. Manufacturing Process

Cleaned livestock bone with the marrow intact is crushed so the marrow cavity is opened, then extracted with water in a pressure cooker for several hours. The hot liquor is separated by decanter and disc centrifuge into a bone residue, an aqueous extract and a marrow fat phase, and a controlled proportion of the fat is held back for later reincorporation. The aqueous extract is cooled to enzyme working temperature, adjusted for pH, and treated with a food grade protease so that residual collagen and muscle protein are hydrolysed into peptides and free amino acids. The enzyme is then inactivated by a heat step.

The hydrolysate is dosed with reducing sugars and, according to the target profile, with sulphur containing amino acids such as cysteine, and taken through a Maillard reaction in a jacketed reactor at controlled temperature, time and pH. This is the step that separates an essence cream from a plain bone extract. The reacted liquor is concentrated under vacuum to the target solids, the reserved marrow fat is added back, and the batch is homogenised so the fat stays dispersed. It is then pasteurised, hot filled into pails or lined drums, cooled, and released against sensory comparison with a retained reference along with solids, nitrogen, salt and microbiological testing.
