The molecule is a six-membered ring lactone (δ-lactone) with a C12 carbon chain, formula C₁₂H₂₂O₂. At room temperature it is a colourless to pale yellow oily liquid with low water solubility.

Delta-Dodecalactone has three high-purity flavour grades: racemic, (R)-enantiomer-enriched, and natural-source.
The standard commercial specification is 98 percent minimum by GC, with a clear pale yellow appearance and a refractive index near 1.458 at 20 degrees C.
Both racemic and (R)-enantiomer-enriched grades exist. The (R)-form delivers a softer, more natural coconut note and is often selected for premium dairy reconstructions.
Kosher and Halal certificates are routinely issued. The natural-source grade is produced by biocatalytic conversion of unsaturated fatty acid precursors and qualifies for natural flavour labelling in the United States and European Union.

Regulatory Status
Delta-Dodecalactone is approved as a flavouring substance in major regulated markets.
It appears on the FEMA GRAS list as FEMA 2401 and is recognised by FLAVIS under number 10.011. In the European Union it is listed in the Union list of authorised flavourings.
The U.S. Food and Drug Administration recognises it as a synthetic flavouring substance under 21 CFR 172.515. JECFA has evaluated the broader aliphatic lactone group and placed Delta-Dodecalactone in a class with no safety concern at current intake levels.
Both synthetic and natural variants are commonly sold with Kosher and Halal certification.
Manufacturing Process
Two industrial routes dominate Delta-Dodecalactone manufacture.
The synthetic route starts from 2-decanal or dec-1-ene. Addition of acrylic acid or methyl acrylate, followed by hydrogenation and acid-catalysed cyclization, yields the δ-lactone ring. Distillation under reduced pressure gives the 98 percent flavour grade.
The natural route uses biotransformation. Substrates such as linoleic or coriolic acid are processed by selected yeast strains (often Yarrowia lipolytica or Mortierella species), which perform β-oxidation and δ-hydroxylation. Acidification then closes the ring, and the lactone is recovered by solvent extraction or steam distillation.
