The word salty in the name describes the taste direction the product serves rather than its salt content; these are savoury flavourings in the sense that sweet flavourings serve confectionery and beverage, and many grades contain little added sodium chloride.

Most of the class is built on thermal process reaction chemistry. Common Markets Grades

Physical form is the first grade distinction. Paste grades hold the fullest and roundest reaction character and suit wet seasonings and sauce bases. Spray dried powders are free flowing and blend cleanly with dry seasonings, though the drying step costs some of the lightest top notes. Liquid and oil dispersed grades are used where the flavour has to enter a fat phase or a brine.

Regulatory Status

Savoury essences of this type are flavourings, not food additives, so they carry no E number. In the European Union the reaction base is a thermal process flavouring, and the flavourings framework prescribes the permitted starting materials, limits the reaction temperature and duration and caps specified process contaminants in the finished flavouring. Every individual flavouring substance blended in after the reaction must appear on the Union list of authorised flavouring substances, and the labelling rules govern whether the product may be described as natural.

Manufacturing Process

A precursor blend of reducing sugar, amino acids, thiamine, protein hydrolysate and a fat or meat substrate is weighed into a jacketed pressure reactor with water and adjusted to a set pH. The vessel is sealed and taken through a defined temperature and time curve, generally above the boiling point of water, so the Maillard reaction runs far enough to build meaty and roasted notes without producing burnt character. The curve, the pH and the substrate together determine whether the batch reads as beef, pork or poultry.

The reacted mass is cooled, neutralised and concentrated under vacuum. Heat sensitive top notes, essential oils, oleoresins and taste actives are added afterwards, since the reaction would destroy them. Paste grades are standardised and filled at this stage. Powder grades are blended with maltodextrin, salt and an emulsifier, homogenised and spray dried, then sieved and checked for flow. Every batch is compared against a retained sensory reference before it is released, and filling is into lined drums, pails or foil laminate bags.
