Xanthan Gum Gellan Gum is a co-processed blend of the two fermentation polysaccharides, designed to use the synergistic interaction between xanthan's pseudoplastic behaviour and gellan's brittle gel network.

The combination delivers a fluid gel that pours, then sets into a thin yet stable matrix capable of suspending insoluble particles and oil droplets across a wide temperature range.

Common Markets Grades

The blend comes in several xanthan-to-gellan ratios, chosen for the target application.

A 70:30 xanthan-heavy ratio is favoured for ready-to-drink protein and plant-milk beverages, where mouthfeel needs to stay light but calcium and cocoa must remain suspended.

A 50:50 balanced ratio is the standard for cold-fill jellies, fruit preparations, and yogurt drinks. It gives a soft, spoonable texture with minimum syneresis.

A 30:70 gellan-heavy ratio is used in clear suspension beverages, ready-to-eat desserts, and savoury jellies that need firmer stand-up.

Each ratio exists in clarified and standard versions, and in low-acyl, high-acyl, or mixed-acyl gellan composition.

Regulatory Status

Xanthan is E415 in the European Union and GRAS in the U.S. under 21 CFR 172.695. Gellan is E418 in the EU and GRAS under 21 CFR 172.665. JECFA has cleared both at standard purity specifications.

Label declaration in most jurisdictions is by individual gum name, listed in descending order of weight. Kosher, Halal, vegan, and non-GMO certifications apply when each input has been certified.

Manufacturing Process

The two gums are manufactured separately by aerobic fermentation, xanthan from Xanthomonas campestris and gellan from Sphingomonas elodea, then alcohol-precipitated, dried, and milled to controlled particle size.

Blending happens at the dry stage in ribbon blenders or conical mixers, with each lot homogenised to a specified ratio tolerance. Co-spray-dried versions also exist, where a slurry of both gums is dried together to give a true composite particle.

Final products are sieved through a single mesh specification and packaged in moisture-barrier liners. Inline blending offers tighter ratio control than batch blending and is preferred for premium-beverage customers.
