Konjac Gum
Konjac Gum is the purified glucomannan fraction of Amorphophallus konjac corm flour, with glucomannan content above 85 percent and minimal residual starch, fibre, and protein. It is the premium konjac hydrocolloid grade and the form recognised under the E425 food-additive number.
The polymer is a linear β-1,4-linked mannose-glucose backbone with intermittent acetyl substitution. It is the highest-molecular-weight commercial polysaccharide, which gives it unmatched viscosity-per-cost in cold-water applications.

Konjac Gum is graded by glucomannan content, viscosity, and mesh size.
Standard food-grade konjac gum runs 85 to 90 percent glucomannan with viscosity of 25 to 35 thousand cP at 1 percent. It is used in dairy, dessert, and meat-product applications.
Premium gum at 90 to 95 percent glucomannan and viscosity above 35 thousand cP is produced for clear beverage, confectionery, and pharmaceutical use.
Mesh sizes range from 80 to 200, with finer mesh for fast hydration in cold systems and coarser mesh for slow controlled hydration in hot processes.
Specialty acid-stable, high-transparency, and rapid-dispersing variants are sold under their own product specifications.

Regulatory Status
Konjac Gum is approved as a food additive in most regulated markets.
Regulation (EC) No 1333/2008 lists it in the European Union as E425(i) konjac gum and E425(ii) konjac glucomannan. Mini-cup jelly confectionery use is restricted.
The U.S. FDA permits konjac gum as GRAS with mini-cup format restrictions. JECFA has assigned ADI not specified.
Halal, Kosher, vegan, non-GMO, organic, and gluten-free certifications are routinely available.
Manufacturing Process
Production starts from refined konjac flour, which is repeatedly washed in 50 to 70 percent ethanol. Each wash swells the residual starch, sugar, and salt impurities while leaving the glucomannan particles intact.
The slurry is filtered, fresh ethanol is added, and the cycle is repeated three to five times. The progressively cleaner gum is then dried under vacuum to preserve viscosity.
The dried gum is milled and air-classified to the target mesh. Quality control verifies glucomannan content, viscosity, residual ethanol, and microbial counts before release.
Yunnan, Sichuan, and Hubei in China dominate the supply of premium konjac gum. Japan operates several high-end refining lines for domestic pharmaceutical and confectionery use.
