Alpha-Amylcinnamaldehyde is a pale yellow oily aromatic aldehyde with a soft, creamy jasmine-floral character that has been a workhorse of perfumery since the 1920s.

The molecule carries an n-pentyl side chain at the alpha position of cinnamaldehyde, which shifts the odour away from sharp cinnamon and toward warm petal-floral notes reminiscent of jasmine, lily, and freesia. It is registered under CAS 122-40-7 with the molecular formula C₁₄H₁₈O.

Regulation (EC) No 1223/2009 lists the substance in the European Union as a fragrance allergen requiring declaration on cosmetic labels when present above 0.001 percent in leave-on or 0.01 percent in rinse-off products.

It appears on the U.S. FEMA GRAS list under FEMA 2061 for use as a flavouring substance, and is included on the Council of Europe and JECFA evaluations for flavour use at low ppm levels.

Manufacturing Process

Industrial manufacture relies on the aldol condensation of benzaldehyde with heptanal in the presence of a basic catalyst, typically dilute sodium or potassium hydroxide in aqueous-alcoholic medium.

The condensation proceeds at moderate temperature to give the alpha,beta-unsaturated aldehyde, after which the crude product is washed neutral, dried, and fractionally distilled under reduced pressure to remove unreacted starting materials and self-condensation by-products.

Modern plants run continuous reactors with tight control of caustic dosing and heptanal feed rate to maximise the trans-isomer content, which carries the cleanest floral note. Final polishing on a wiped-film evaporator delivers a colourless to pale-straw liquid with very low residual aldehyde odour.
