Beverage Flavour
Beverage flavour is the class of flavouring preparations formulated specifically for drinks, where the flavour has to remain stable and visually uniform in a dilute, usually acidic and often transparent water system for months. The formulation problem is physical as much as sensory, because most aroma materials are oils and the product they go into is water.
Three delivery systems answer that problem. Water-soluble flavours are made by dissolving or extracting aroma materials into ethanol, propylene glycol or a water and glycol blend, sometimes after removing the insoluble terpene fraction, and give a clear solution suited to still and clear drinks. Emulsions disperse flavour oil as fine droplets stabilised by gum acacia or modified starch, and are used where the oil load is too high to dissolve or where the drink is meant to look cloudy. Encapsulated powders carry flavour in a dried carbohydrate matrix for powdered drink mixes.
Emulsion stability decides shelf life. If the oil droplets are less dense than the surrounding drink they cream to the top and form a visible ring at the neck of the bottle, so the oil phase is weighted with a permitted density-adjusting agent until it matches the beverage.

Common Markets Grades
Grades are described by their physical system rather than by profile alone. Clear water-soluble flavours are used for still waters, clear sports drinks and spirits. Emulsions divide into flavour emulsions, where the objective is aroma, and clouding emulsions, where the objective is opacity and the flavour load is low. Both are sold as concentrates at a stated dosage. Encapsulated spray-dried powders serve powdered mixes and instant beverages.
Beyond that, grades are specified by the technical constraints of the drink. Acid-stable versions protect citral and other fragile aroma chemicals from the low pH of a carbonated soft drink, using antioxidants or encapsulation. Heat-stable versions survive tunnel pasteurisation and hot fill. Alcohol-tolerant versions hold in ready-to-drink spirits, where ethanol destabilises a conventional emulsion. Natural, nature-identical and artificial designations run across all of these and determine the label declaration, and clouding systems that avoid weighting agents are used where a formulator wants to avoid declaring one.

Regulatory Status
In the United States the FEMA GRAS programme or the food additive regulations for synthetic flavourings cover the flavouring substances used, and labelling follows 21 CFR 101.22. The weighting agents used in emulsions fall under separate regulation, and this is the area of most active change in the category, since the FDA revoked the authorisation for brominated vegetable oil in 2024, leaving ester gum, sucrose acetate isobutyrate and damar gum as the working options in that market.
In the European Union Regulation (EC) No 1334/2008 and its Union list govern flavourings, which carry no E number, while the carriers, emulsifiers, weighting agents and preservatives used with them are food additives authorised individually under Regulation (EC) No 1333/2008 and carry their own numbers. Glycerol esters of wood rosin are E445 and sucrose acetate isobutyrate is E444. Brominated vegetable oil is not permitted in the European Union. Regulation 1334/2008 also caps certain naturally occurring substances in flavourings, and quinine and caffeine in beverages are subject to their own labelling requirements. Codex maintains general guidelines for the use of flavourings and a general standard for food additives that cover the same ground internationally.
Manufacturing Process
Water-soluble grades are made by compounding, in which essential oils, extracts and aroma chemicals are weighed to formula and dissolved in ethanol, propylene glycol or a glycol and water blend, then held to marry, chill filtered to drop out anything that would haze in the cold, and polish filtered. Where the flavour oil carries insoluble terpenes, those are removed first by vacuum fractional distillation or by countercurrent washing to give a terpeneless or folded oil that will dissolve.
Emulsions follow a different route. The oil phase, made up of the flavour oil and a weighting agent chosen to bring its density close to that of the finished drink, is prepared separately from the water phase. The water phase contains gum acacia or octenyl succinic anhydride modified starch, a preservative and often a sugar or polyol to raise viscosity. The two are combined under high shear to form a coarse pre-emulsion, then passed through a high pressure homogeniser at several hundred bar, sometimes in two stages, to reduce the droplet size to around one micrometre. Fine droplet size and a narrow distribution are what prevent creaming and ripening over shelf life. The emulsion is cooled, checked for particle size, density and accelerated stability, and packed.
