Brewers Yeast is the dried cellular biomass of Saccharomyces cerevisiae recovered from beer fermentation.
The ingredient is produced either as bitter brewers yeast in its natural state or as debittered brewers yeast that has been washed to remove residual hop iso-alpha acids. Both forms supply protein, B vitamins, minerals, and beta glucans to food, supplement, and feed applications.

Brewers Yeast divides into several grades, defined by source, processing, and intended use.
Primary grown grade is cultured specifically for the supplement market and never enters beer production. It has a clean flavour profile and consistent vitamin content.
Spent brewery grade is recovered from commercial breweries after fermentation. It is washed, debittered, pasteurised, and spray dried to yield a tan to yellow powder with a savory yeasty flavour.
Feed grade follows similar processing but with looser tolerances on colour and flavour. It goes into livestock and pet food in granular and powder forms.

Brewers Yeast is broadly recognised as a safe and nutritious food ingredient.
In the European Union it is treated as an ordinary food ingredient rather than as a food additive. Its safety as a feed ingredient is covered by the EU feed material catalog.
The U.S. Food and Drug Administration recognises the dried yeast as GRAS under 21 CFR 172.325 for use as a nutrient and dietary supplement, with controls on heavy metals and microbiological quality.

Manufacturing Process
Brewers Yeast production starts at the brewery, where Saccharomyces cerevisiae ferments malted barley wort into beer over several days.
At the end of fermentation a thick yeast cream is recovered from the bottom of the fermenter. The cream is screened to remove trub, washed with cold water to reduce bitter hop compounds, and pasteurised to inactivate the cells.
The debittering step typically uses a mild alkaline wash or activated carbon to extract residual iso-alpha acids. The washed cream is then spray dried or drum dried to a low moisture powder.
For supplement grade material, primary grown yeast is propagated on a defined molasses based medium without any contact with the brewing process. The harvested cells are washed, pasteurised, and dried in the same way.
