Diammonium Phosphate
Diammonium Phosphate is a crystalline salt of formula (NH₄)₂HPO₄ used primarily as a nitrogen and phosphorus source for fermenting yeast.
The compound, commonly abbreviated DAP, is the most widely used inorganic yeast nutrient in winemaking, brewing, distilling, and industrial bioethanol production.

Common Markets Grades
Three grades of Diammonium Phosphate are made: food, fermentation, and fertilizer.
Food and fermentation grade conforms to FCC, OIV (International Organisation of Vine and Wine), and JECFA specifications with assay above 96 percent and low fluoride content.
Wine grade is typically sold as fine white granules sized for rapid dissolution into juice or must.
Brewing grade is produced both as crystalline solid and as concentrated aqueous solution for dosing pumps. Fertilizer grade dominates global volume and is granulated for blending into NPK formulations.

Regulatory Status
Diammonium Phosphate carries broad regulatory acceptance for fermentation and food uses.
In the European Union it is covered by E342(ii) and is also listed in EU regulation 934/2019 as an authorised oenological practice for wine production.
The U.S. Food and Drug Administration recognises the salt as GRAS under 21 CFR 184.1141b for use as a dough strengthener, nutrient for yeast, and pH control agent.
The International Organisation of Vine and Wine (OIV) authorises DAP under its International Oenological Codex with detailed purity specifications. JECFA has placed ammonium phosphates in the acceptable group without numerical restriction when used per good manufacturing practice.
Manufacturing Process
Diammonium Phosphate is produced by reacting phosphoric acid with excess ammonia at a molar ratio above 1.5 to 1.
The reaction H₃PO₄ + 2 NH₃ → (NH₄)₂HPO₄ is highly exothermic and runs in pipe cross reactors or stirred vessels. The product slurry is granulated in a rotating drum and cured under controlled humidity.
Food and fermentation grade material is purified from clean wet process phosphoric acid that has been defluorinated and treated to remove arsenic and heavy metals. The purified salt is recrystallised, dried, and milled to specification.
