Two different jobs sit in this category. The leavening acids, Monocalcium Phosphate and Sodium Acid Pyrophosphate, are chosen by how fast they react with bicarbonate. Monocalcium phosphate releases most of its gas during mixing, while sodium acid pyrophosphate is supplied in graded reaction rates so that gas can be held back until the oven. Neutralising value sets the dose. Diammonium Phosphate does not leaven at all and works as a yeast nutrient in fermented doughs.
