Common Markets Grades

Passion fruit juice is graded by varietal, processing, and certification status.

The two main varietals are purple passion fruit (P. edulis f. edulis), with smaller fruit, brighter flavour, and lower yield, and yellow passion fruit (P. edulis f. flavicarpa), with larger fruit, higher acidity, and higher juice yield. Industrial supply is dominated by the yellow variety.

Processing grades include single-strength juice (12 to 16 degrees Brix), aseptic NFC, and concentrate (50 to 65 degrees Brix). Concentrate is the most common trade format due to the cost of shipping single-strength juice and the high natural acidity.

Pulp grades range from cloudy (with suspended pulp particles for natural appearance) to centrifuged clear (for clear beverage applications).

Certification grades cover organic (EU, USDA NOP, JAS) for premium and natural-positioning markets, and conventional for volume juice and beverage manufacture. Both grades follow the same processing route and are produced side by side from the same processors.

Regulatory Status

Passion fruit juice is regulated as a fruit juice in all major markets.

The European Union covers it under Directive 2012/12/EU on fruit juices. The minimum Brix for passion fruit juice for the labelled fruit juice category is 12 degrees Brix when no exceptions apply.

The U.S. Food and Drug Administration regulates juice under 21 CFR 101 (labelling), 21 CFR 102 (0), and 21 CFR 120 (juice HACCP). Passion fruit juice is most commonly sold as a juice blend ingredient and labelled accordingly.

Codex Alimentarius standard CXS 247-2005 covers fruit juices and nectars. The minimum juice content for passion fruit nectar is 25 percent.

Organic certification follows EU Regulation 2018/848, USDA NOP 7 CFR Part 205, and JAS organic standards. Chain-of-custody from farm to processor to packer must be documented. Conventional grades follow general food law and Regulation 396/2005 on pesticide MRLs.

Manufacturing Process

Production begins with ripe passion fruit harvested when the skin has dropped from the vine or wrinkled slightly on the bush. Fruits are washed, halved, and the pulp with seeds scooped out by mechanical extractor.

The pulp is held briefly to allow enzymatic depectinization, then passed through a finisher screen that separates juice and pulp from the hard seeds. Yield is typically 30 to 35 percent juice on whole-fruit weight for yellow passion fruit.

Crude juice is centrifuged or screened to control pulp level, then pasteurised at 88 to 92 degrees Celsius for 30 to 60 seconds in a plate or tubular exchanger. Heat treatment must be tightly controlled because the volatile aroma fraction is heat-sensitive.

Pasteurised juice destined for single-strength sale is filled hot into aseptic packs or chilled into bottles. Juice for concentrate is fed to a multi-stage vacuum evaporator that operates at 50 to 70 degrees Celsius to reduce thermal damage.

Aroma recovery captures the top-note volatiles in the first evaporation effect and adds them back to the concentrate at the end. Concentrate at 50 degrees Brix is the standard trade specification; organic and conventional concentrate are processed on segregated lines to maintain organic chain-of-custody.
