A roast and cured products flavouring agent is a compounded savoury flavour formulated specifically for grilled, roasted, smoked and cured meat products, where its purpose is to build or restore the aroma that the process itself is expected to create. It is used in items such as barbecued pork, roast duck, cured sausage, bacon and air dried meats.

Three flavour systems are normally combined. A thermal process reaction flavour supplies the cooked meat backbone through Maillard chemistry between cysteine and reducing sugars. A smoke flavour, produced from controlled pyrolysis of hardwood, supplies the phenolic and guaiacol notes of smoking. Regulatory Status

In the United States the flavour components rely on FEMA GRAS status and on the substances permitted under 21 CFR 172.515, with natural extractives covered by 21 CFR 182.20, and the finished agent is declared as natural flavour or artificial flavour according to what was used. Smoke flavourings are treated as flavourings rather than as additives. Because the products it is used in are meat and poultry, the ingredient falls within the scope of Food Safety and Inspection Service labelling rules, and where the formula supports a cured appearance the separate rules governing curing agents, nitrite use and the labelling of uncured products apply to the finished meat.

In the European Union the product combines thermal process flavourings, flavouring substances and smoke flavourings, all governed by Regulation (EC) No 1334/2008 together with the specific regulation on smoke flavourings, which requires each primary smoke product to be authorised and listed and sets conditions and maximum levels for its use. Flavourings are not assigned E numbers, while curing salts, phosphates and antioxidants used in the meat formulation are additives regulated in their own right. The contaminants legislation sets limits on polycyclic aromatic hydrocarbons in smoked meat products, which is the control that most directly shapes how smoke flavourings are used.

Manufacturing Process

The reaction stage is prepared first. Hydrolysed protein or a meat extract is cooked in a jacketed pressure reactor with a reducing sugar, cysteine or thiamine as the sulphur donor, and an animal fat appropriate to the target species, under controlled pH, temperature and time. The conditions determine whether the profile reads as roasted, grilled or braised, and the batch is cooled rapidly at the endpoint to stop the reaction before burnt notes develop.

The smoke fraction is bought in or made separately by pyrolysing hardwood under limited oxygen and condensing the vapours into water, after which the tar phase is separated and the aqueous condensate is filtered and aged so that polycyclic aromatic compounds are removed and the phenolic fraction is retained. The reaction mass, the smoke condensate, the cured character components and the individual aroma chemicals are then compounded into the chosen carrier at low temperature, blended to uniformity and held for a short maturation period. Liquid grades are polish filtered and filled under nitrogen. Powder grades are emulsified with a carrier, homogenised at high pressure and spray dried at a low outlet temperature. Every batch is cleared by a trained sensory panel against a retained reference.
