Single chocolate blocks are graded by origin, cocoa percentage, and chocolate type.

Common origin tiers include single country (Ecuador, Madagascar, Vietnam, Ghana, Peru), single region (Chuao in Venezuela, Sambirano in Madagascar), and single estate or cooperative lots with farm-level traceability.

Cocoa percentage typically runs 65 to 80 percent for dark single-origin blocks, where the higher cocoa share lets the origin character speak through. Milk single-origin blocks run 38 to 50 percent and pair lighter dairy notes with the source bean profile.

White single-origin is rare but exists where the cocoa butter itself is single-origin-sourced for flavour-led applications.

Regulatory Status

Single-origin chocolate is governed by the same regulations as conventional chocolate in each market.

EU Directive 2000/36/EC sets minimum cocoa solids and cocoa butter content, with origin labelling permitted when the entire cocoa share of the recipe comes from the named country, region, or plantation.

U.S. FDA standards under 21 CFR 163 apply to compositional definitions. Origin claims fall under general truth-in-labelling rules and require documentary support.

Codex CXS 87-1981 covers the international product standard. The EU Deforestation Regulation (EUDR), in force from 2025, requires geolocation traceability for cocoa entering the EU market and is generally easier to satisfy with single-origin material.

Single-origin lots frequently carry organic (EU, USDA NOP), Fairtrade, Rainforest Alliance, or direct-trade certifications. Halal and Kosher approvals exist depending on the manufacturer's plant credentials.

Manufacturing Process

Production begins with the sourcing relationship. The chocolate maker contracts directly or through a specialty importer for a defined volume of beans from one origin, often a single farm cooperative or estate.

Beans arrive with fermentation logs, cut-test results, and sometimes a sensory dossier. They are cleaned, debacterized, winnowed, and roasted on a profile developed for that specific origin to bring out its native flavour compounds.

Roasted nibs are ground to cocoa mass, then combined with sugar (and milk powder for milk variants), refined to below 25 microns, and conched for 24 to 72 hours.

Conching is generally lighter and shorter than for industrial blend chocolate, since the goal is to preserve the volatile fruit, floral, and spice notes that define the origin.

Tempered chocolate is cast into 1, 2.5, or 5 kilogram block moulds, cooled, demolded, and wrapped in food-grade film. Each block carries lot codes traceable to the specific bean shipment and processing date.
