Vanilla Pod

The vanilla pod is the cured fruit of a climbing orchid, principally Vanilla planifolia, harvested green and taken through a curing sequence that develops the aroma the fresh pod does not possess.

A green pod contains almost no free vanillin. The flavour is locked up as glucovanillin and related glucosides, and curing exists to break down the cell structure and let native beta glucosidase release the aglycones, alongside oxidative and enzymatic reactions that generate several hundred further aroma compounds. Cured beans from Madagascar and neighbouring islands, marketed as Bourbon vanilla, are the reference profile. Vanilla tahitensis pods are shorter, fatter and higher in anisic compounds, giving a floral and cherry like character, while Vanilla pompona is a minor third species.

The cured pod is a dark brown to near black, supple, oily and wrinkled bean, typically between twelve and twenty centimetres long, filled with a sticky pulp containing many minute black seeds. Moisture content decides both handling and value, since a supple high moisture bean suits kitchen use while a drier bean travels and stores better. Vanillin can crystallise on the surface as a white frost, which is a sign of a well cured bean rather than a defect. Pods are stored cool in sealed packaging, since drying makes them brittle and humidity encourages mould.

Common Markets Grades

The primary division is between gourmet, also called prime or first grade, and extraction grade, sometimes called red or splits. Gourmet beans are whole, unblemished, supple and high in moisture, generally between thirty and thirty five percent, and are graded and priced by length in centimetre bands, since appearance matters where the bean is presented whole. Extraction beans are drier, at roughly fifteen to twenty five percent moisture, and may be split, short, blemished or discoloured, but they carry a comparable vanillin content per unit dry weight and are bought for processing into extract.

Below those two sit cuts, defined as short pieces and fragments, and vanilla powder made from milled bean. Origin is quoted alongside grade, with Madagascar, Uganda, Indonesia, Papua New Guinea, India, Mexico and Tahiti each carrying a recognised profile and price. Vanillin content on a dry basis, commonly between one and a half and two and a half percent for sound Bourbon material, is the analytical figure a processing buyer contracts on. Organic and fair trade certification, vacuum packed presentation and bundled or loose packing complete the specification.

Regulatory Status

In the United States vanilla beans are a food commodity rather than a food additive, and the definitions in 21 CFR Part 169 describe vanilla beans and the unit of vanilla constituent used to set the strength of the extracts made from them. Imported beans are subject to the preventive controls and foreign supplier verification requirements made under the Food Safety Modernization Act and to inspection for filth, mould and insect damage, with defect action levels published for insect and mould damage in the spice defect guidance. Pesticide residues are controlled by tolerances administered by the Environmental Protection Agency.

In the European Union vanilla beans are a food, so they carry no E number and no additive authorisation, and the applicable controls are the general food law framework, the maximum residue limits for pesticides set under Regulation (EC) No 396/2005, and the contaminant limits in the general contaminants regulation, with ochratoxin A the mycotoxin of practical concern in dried tropical commodities. Consignments of dried botanicals may be subject to increased official controls at the point of entry. Codex maintains a commodity standard for vanilla beans covering grading, moisture and defects, together with a code of hygienic practice for spices and dried aromatic herbs that addresses microbiological control during curing and drying.

Manufacturing Process

Cultivation is labour intensive because the orchid has no natural pollinator outside its Mexican range, so each flower is pollinated by hand within a few hours of opening. The fruit takes eight to nine months to develop and is picked green but mature, when the tip begins to turn yellow, since a bean picked too early will never cure properly. Around five to six kilograms of green pod give one kilogram of cured bean.

Curing has four stages. Killing arrests the vegetative growth of the pod and ruptures the cells, most often by immersing the beans in water held near sixty five degrees Celsius for a few minutes, though sun killing and freezing are used in some origins. Sweating follows, with the hot beans wrapped in cloth inside insulated boxes and exposed to the sun each day for one to two weeks, a warm moist phase in which the enzymatic release of vanillin from its glucoside largely takes place. Slow drying on racks in shade over several weeks brings the moisture down to the target for the grade. Conditioning completes the process, with the beans held in closed boxes for one to three months while the aroma rounds out. The cured pods are then graded by length, colour and suppleness, bundled, and vacuum packed.
