Yeast Peptides come in two grades, nutritional and flavour.

Nutritional grade is characterised by protein content above 70 percent, a high free amino acid fraction, and a defined molecular weight distribution. It is a light yellow free flowing powder.

Flavour grade is processed to maximise umami intensity. The hydrolysis conditions favor the release of glutamic acid and savory peptides, giving a more pronounced taste impact at lower dose.

Both grades are spray dried from concentrated hydrolysate and offered in standard bag and bulk container formats.

Hydrolysed yeast and yeast extracts are listed in the EU food category system. The U.S. Food and Drug Administration permits autolyzed yeast and yeast extract as flavour ingredients with appropriate identity declarations.

Allergen labelling rules vary by jurisdiction but yeast peptides from Saccharomyces cerevisiae are not generally considered priority allergens. Halal and Kosher certifications are commonly available.

Manufacturing Process

Yeast Peptides are produced by enzymatic hydrolysis of yeast protein.

The starting material is concentrated yeast protein, typically obtained from autolyzed and washed Saccharomyces cerevisiae biomass. The protein is suspended in water and treated with a sequence of food grade proteases such as endopeptidases and exopeptidases.

The enzyme cocktail and hydrolysis conditions are tuned to deliver the target molecular weight distribution and flavour profile. The reaction proceeds for several hours at controlled pH and temperature.

At the end of hydrolysis the enzymes are inactivated by a brief heat treatment. The hydrolysate is filtered to remove insolubles, concentrated by evaporation, and spray dried to a free flowing powder.
