The ingredient delivers a complete amino acid profile with all essential amino acids and contributes a clean mildly savory flavour. Modern grades carry protein content above 80 percent on the dry basis, positioning yeast protein as a credible alternative to plant and animal protein isolates.

Yeast Protein has three grades: food, supplement, and fermentation.
Food and supplement grade carries protein content of 80 percent or higher, with a defined amino acid composition, low residual nucleic acid, and a neutral to lightly savory flavour. Colour ranges from cream to light tan depending on heat history.
Fermentation grade is a less refined protein concentrate used as a peptone substitute in microbial growth media. It is produced with broad specifications focused on total nitrogen and amino acid content.
All grades are fine free flowing powders packed in multi wall paper bags or lined bulk containers.

The parent biomass has decades of safe use as a food ingredient. Halal and Kosher certifications are commonly available for primary grown material. Allergen labelling rules vary by jurisdiction but yeast protein is not generally listed as a priority allergen.
Manufacturing Process
Yeast Protein production begins with primary grown Saccharomyces cerevisiae biomass cultured on a clean medium of molasses and inorganic salts.
The harvested cells are mechanically disrupted by bead milling or high pressure homogenisation. The released cellular contents are subjected to a controlled autolysis at mild conditions designed to preserve protein integrity.
The protein fraction is then separated from cell wall fragments, soluble carbohydrates, and nucleic acids by a combination of washing, centrifugation, and selective precipitation. Modern processes include enzymatic nucleic acid degradation to reduce purine load in the finished ingredient.
The purified protein slurry is washed to neutrality, gently pasteurised, spray dried, and milled to a free flowing powder.
