Yeast Polypeptide is the longer chain fraction of enzymatically hydrolysed Saccharomyces cerevisiae protein.

Unlike free amino acid heavy yeast peptide products, the polypeptide grade retains a higher proportion of intermediate chain length peptides between 1000 and 10000 daltons. The composition gives a milder savory flavour and a slower release nitrogen profile.

Yeast Polypeptide divides into a nutritional grade and a cosmetic grade.

Nutritional grade is characterised by protein content above 70 percent and a molecular weight distribution centred around 3000 to 5000 daltons. The free amino acid fraction is held below 15 percent to preserve peptide character.

Cosmetic grade undergoes additional purification to deliver a low colour, low odour powder suitable for skin and hair care formulations. Filtration through reduced pore size membranes removes residual cell wall fragments and improves clarity in liquid systems.

Manufacturing Process

Yeast Polypeptide is produced by a controlled enzymatic hydrolysis of yeast protein that limits the depth of cleavage.

Yeast protein concentrate is suspended in water and treated with selective endopeptidases under defined pH and temperature. The reaction is monitored by degree of hydrolysis and stopped at a value that preserves intermediate chain length peptides.

The hydrolysate is heat treated to inactivate the enzymes, then filtered through coarse and fine membranes to remove insoluble debris. For cosmetic grade, an additional ultrafiltration step controls the upper end of the molecular weight distribution.

The clarified hydrolysate is concentrated, spray dried, and milled to specification.
