Collagen Type-Ii
Collagen Type II is the dominant structural protein of hyaline cartilage and is produced commercially from chicken sternum cartilage and, less often, from bovine tracheal cartilage. It is produced either as undenatured native Type II collagen (UC-II style) at low daily doses or as a hydrolysed Type II peptide for joint-positioned formulas.
The native form preserves the triple helix and characteristic epitopes recognised by the gut-associated immune system, while the hydrolysed form provides the amino acids typical of Type II, including glycine, proline, hydroxyproline, and Type II-specific hydroxylysine glycosides.

Native undenatured grades are standardised to total Type II collagen content, typically 20 to 25 percent in the finished concentrate, with a target oral dose around 40 milligrams per day. Process control protects the triple-helix structure through low-temperature handling and gentle pepsin digestion.
Hydrolysed grades carry high protein content with defined molecular weight, usually in the 2 to 5 kDa range, and much higher daily doses in the multi-gram range.
Source streams include chicken sternum cartilage, which is the main raw material, and bovine tracheal cartilage for kosher and halal-positioned segments where chicken sourcing is not acceptable. Both formats are typically packed in foil-lined sacks with controlled humidity.

Regulatory Status
Collagen Type II is regulated as a dietary supplement ingredient and as a food ingredient in major markets.
In the United States native undenatured Type II collagen has been the subject of New Dietary Ingredient notifications and is marketed under a self-affirmed generally recognized as safe position by some suppliers. The U.S. Food and Drug Administration permits its use in dietary supplements at labelled doses.
In the European Union general food law covers it, together with the Regulation EC 853/2004 hygiene rules for collagen of animal origin. Some Member States treat low-dose native Type II material as a borderline case between food supplement and medicinal product, requiring careful claim management.
Halal certification is available for poultry-derived material from approved slaughter, and kosher certification is rare because of the difficulty of qualifying poultry cartilage supply.
Manufacturing Process
Production starts with chicken sternum cartilage recovered from slaughter operations. The cartilage is washed, trimmed of meat residues, and ground to a uniform particle size.
For native undenatured material, ground cartilage is subjected to a low-temperature pepsin digestion that releases the triple helix while preserving its conformation. The extract is filtered, concentrated by low-temperature ultrafiltration, and freeze-dried or low-temperature spray-dried to keep the epitopes intact.
For hydrolysed Type II, the cartilage is heat-extracted to release Type II gelatin, then hydrolysed with food-grade alkaline or neutral bacterial proteases. The peptide solution is decolorised, deionized, ultrafiltered, concentrated, and spray-dried by conventional means.
Quality release for native material includes a circular-dichroism or ELISA-based assay to confirm triple-helix retention, while hydrolysed material is checked against molecular-weight distribution and protein content.
