Manufacturing Process

The starting material is fish skin, scales, or a mixed frame fraction recovered from filleting plants. The tissue is washed to remove residual meat, fat, and pigment, then demineralized with dilute acid to dissolve calcium phosphate from scales and bone fragments.

Conditioned tissue is heated in clean water to release fish gelatin, which is then hydrolysed with food-grade proteases such as alkaline or neutral bacterial enzymes. Hydrolysis time, enzyme dose, and ultrafiltration cut-off determine the final molecular-weight distribution.

The peptide solution is decolorised with activated carbon, deionized through ion-exchange resins, polished to reduce fish odour, concentrated under vacuum, and spray-dried to a fine white or off-white powder.

Cold-water and warm-water species require different process windows because their collagens have different denaturation temperatures, with cold-water collagen melting closer to 15 degrees Celsius and tilapia collagen near 35 degrees.
