Grades are described by core and by coating. Cores include puffed and extruded cereal crisps, rice and wheat based, cereal and nut mixtures, and whole or broken nut pieces, each giving a different bulk density and crunch. Regulatory Status

The product is a composite food rather than a food additive, so it has no E number of its own and is regulated through its components. Manufacture falls under Regulation 852/2004 with the general food law in the European Union and the preventive controls rules at 21 CFR Part 117 in the United States. Where the coating is a vegetable fat compound rather than chocolate, it must not be described as chocolate: the reserved names of Directive 2000/36/EC in the European Union and the cacao product standards of identity at 21 CFR Part 163 in the United States both restrict that term, and a compound coated piece is labelled as a coating, a confection or a chocolate flavoured product instead.

Colours are the principal regulatory point. Permitted lists differ between markets, with colours authorised by food category under Regulation 1333/2008 in the European Union, where certain azo colours carry an additional warning statement about effects on activity and attention in children, and with certified colour additives listed at 21 CFR Part 74 in the United States and required to be declared by name. The glazing agents used in polishing hold additive authorisations, shellac as E904 and carnauba wax as E903 in the European Union, and the United States permits shellac at 21 CFR 175.300 and as a listed confectioner's glaze ingredient. Manufacturing Process

The cores are made or bought in first. Cereal crisps are produced by extrusion or puffing and dried to a low moisture so they are brittle rather than tough, while nut pieces are roasted, cooled and sized on screens. Cores are screened before coating, because dust and fines consume coating without producing saleable pieces and give a rough finish.

Coating is applied in a rotating pan or on an enrobing belt. In panning, the cores are tumbled while molten compound coating is added in successive small doses, each allowed to set under cool air before the next, which builds a shell layer by layer and rounds the piece. Colour is dosed into the coating rather than applied afterwards for most grades, though a final coloured layer is sometimes applied separately to achieve a bright finish over a dark base. A polishing step follows, in which a glazing agent, commonly shellac or carnauba wax in a carrier, is applied in the pan to raise gloss and add a further barrier. The pieces are cooled through a tunnel to complete crystallisation of the coating fat, screened to remove doubles and fines, and packed in lined cartons or pails. Colour separated lots are blended to the specified assortment at the packing stage.
