Difurfuryl Disulfide is a pale yellow to amber liquid aroma chemical with the formula C₁₀H₁₀O₂S₂ and CAS number 4437-20-1. It is the oxidative dimer of furfuryl mercaptan and carries a softer, longer-lasting profile centred on toasted coffee, roasted onion, and a sweet sulphur depth.
It is widely used in coffee, savory, and meat flavour work to give body and persistence behind the sharper top of free thiols. Dosing in finished food is in the parts-per-billion to low parts-per-million range.

Manufacturing Process
Industrial Difurfuryl Disulfide is produced by controlled oxidative coupling of furfuryl mercaptan.
The standard method bubbles air or oxygen through a solution of furfuryl mercaptan in a polar solvent in the presence of a mild oxidant such as hydrogen peroxide, iodine, or a copper catalyst. The free thiols couple cleanly to form the symmetrical disulfide bond.
Alternative methods use direct oxidation of furfuryl mercaptan with stoichiometric oxidants under careful temperature control, since over-oxidation can give thiosulfinates or sulphonic acid byproducts.
Crude product is purified by short-path vacuum distillation, then filtered and packed under nitrogen in amber containers. Although the disulfide is more storage-stable than the parent thiol, prolonged exposure to light and air will still darken the material over time.
