Fish Gelatin
Fish Gelatin is a thermoreversible gelling protein produced by hot-water extraction of cleaned fish skin and, less often, scales and bones. It is the principal non-mammalian gelatin available at industrial scale and is the default route for halal, kosher, and pescatarian gelatin applications.
The polypeptide pool covers the same 50 to 250 kDa range as mammalian gelatin, but its lower content of proline and hydroxyproline gives it a lower melting point and lower bloom strength on a like-for-like basis.

Fish Gelatin is graded by bloom strength, source species, and thermal class.
Cold-water grades from cod and pollock skin typically deliver 70 to 150 g Bloom and melt below body temperature, which makes them suited to flavour-release formats such as nutraceutical softgels. Warm-water grades from tilapia and pangasius reach 180 to 260 g Bloom, comparable to medium-bovine grades, and behave more like conventional mammalian gelatin in gummy and capsule manufacture.
Pharmaceutical fish gelatin is produced to Ph. Eur. and USP capsule monographs, with halal and kosher certifications maintained on segregated lines.
Spray-dried instant grades are produced for cold-soluble applications including instant desserts and cosmetic masks.

Regulatory Status
Fish Gelatin is regulated as a food ingredient and as a pharmaceutical excipient in most jurisdictions.
The U.S. Food and Drug Administration treats edible fish gelatin as generally recognized as safe when produced from clean, sound fishery raw materials. Fish allergen labelling applies under the Food Allergen Labelling and Consumer Protection Act.
In the European Union, Regulation EC 853/2004 covers it for collagen and gelatin of fishery origin, with fish listed among the mandatory allergens in Annex II of Regulation EU 1169/2011. Ph. Eur. monographs apply to pharmaceutical and capsule grades.
Halal and kosher certifications are widely available. JECFA treats gelatin as a food rather than a food additive and has not assigned a numerical limit.
Manufacturing Process
Production begins with washed and trimmed fish skin sourced from filleting operations. The skin is demineralized with dilute acid, then briefly conditioned with a mild acid or alkaline pretreatment depending on species and target bloom.
The conditioned skin is extracted in successive hot-water passes between 45 and 70 degrees Celsius, with cold-water species extracted at the lower end of the range to protect chain integrity. The extracts are filtered, deionized through ion-exchange resins, and concentrated under vacuum.
The concentrate is sterilised, chilled to a gel, dried on belt or net dryers, milled, and blended to specification.
Because fish gelatin has a lower proline-hydroxyproline content than bovine or porcine gelatin, gelling and drying steps run at lower temperatures to maintain functionality.
