Liquid Food Flavouring Essence is the trade description used across the Chinese flavour industry for ready to dose liquid flavourings intended for food and beverage manufacture, corresponding to what is elsewhere sold simply as a liquid flavour. The word essence in this usage means a compounded and diluted preparation rather than a concentrated extract, and material sold under the name is formulated to be added directly at a stated dosage without further dilution.

Three constructions cover almost the whole category. Water soluble essences carry the aroma fraction in propylene glycol, ethanol or a glycol water blend and are used in beverages, jellies, dairy drinks and other aqueous systems. Oil soluble essences carry it in triacetin or refined vegetable oil for chocolate, biscuit cream, fried snacks and seasoning oils. Emulsion essences disperse an oil phase in water with gum acacia or modified starch and are used where cloud is wanted alongside flavour.

Typical dosage is between 0.05 and 0.3 percent of the finished product. The practical constraints are the same as for any liquid flavour: the top note fraction is volatile and is lost in open cooking, and a preparation dosed outside its intended solubility system will separate.

Regulatory Status

In the United States labelling of flavours as natural or artificial follows 21 CFR 101.22, and the FEMA GRAS programme clears the individual flavouring substances, as do 21 CFR 172.515 for synthetic flavouring substances and 21 CFR 182.20 for essential oils, oleoresins and natural extractives. The carriers have separate clearances, with propylene glycol generally recognised as safe under 21 CFR 184.1666 and triacetin under 21 CFR 184.1901.

In the European Union the framework is Regulation (EC) No 1334/2008, which maintains the Union list of authorised flavouring substances with FL numbers and defines natural flavourings, flavouring preparations and thermal process flavourings. Regulation (EC) No 1333/2008 governs carrier solvents and emulsifying agents used in flavourings as food additives, with propylene glycol carrying the number E 1520, gum acacia E 414 and the modified starches the E 1400 series. Codex has adopted general guidelines for the use of flavourings, and JECFA has evaluated flavouring substances in structural groups. Milk, soy, nut, sesame, celery and fish derived components trigger allergen declaration in both jurisdictions.

Manufacturing Process

Compounding follows a flavourist formula. Aroma chemicals, essential oils, extracts and any reaction base are weighed on precision balances through a dispensary that verifies each addition, with potent materials dosed as pre made dilutions rather than neat, and dissolved into the specified carrier under agitation. The blend is mixed to homogeneity, held for a maturation period so the components equilibrate, then filtered.

Water soluble and oil soluble grades are filled at that point into lined drums or intermediate bulk containers, nitrogen blanketed where the composition is prone to oxidation. Emulsion grades take an additional stage in which the gum phase is hydrated separately, the oil phase is added under high shear in a colloid mill and the coarse emulsion is passed through a high pressure homogeniser until the droplet size distribution meets specification, since droplet size decides cloud appearance and physical stability. Every lot is released against a reference chromatogram by gas chromatography and against a retained sample by sensory panel.
