Mince and granule grades, typically 2 to 5 millimeters, are used in meat-extender applications and as ground-meat analogues.

Chunk and strip grades, 8 to 25 millimeters, are positioned for stir-fry, stew, and curry preparations where a visible meat-like structure is desired.

Manufacturing Process

Peanut TVP starts with defatted peanut flour or peanut protein concentrate. The starting material is screened for aflatoxin, moisture, and particle size.

The flour is conditioned with water and minor functional ingredients such as starch or hydrocolloid, then fed into a twin-screw extruder.

Inside the extruder the dough is heated under high shear and pressure, then forced through a die. The sudden pressure drop at the die exit causes water to flash to steam, which aligns the protein into a fibrous, meat-like structure.

The extrudate is cut to size, dried to roughly 8 percent moisture, cooled, and screened.

Finished product is sieved into mince, granule, chunk, or strip fractions and packed in food-grade liners, often with metal-detection and final aflatoxin verification.
