Probiotic concentrated beverages are fermented liquid bases carrying a high count of live lactic acid bacteria, sold at several times drinking strength so that a small dose is diluted or consumed as a shot. The category covers concentrated fermented milk drinks, fermented plant and fruit bases, and clear fermented liquids in which the culture is suspended rather than acidifying a dairy matrix.
The base is normally a milk, whey, soy, oat or fruit juice substrate fermented with Lactobacillus, Lacticaseibacillus or Streptococcus thermophilus strains, sometimes with bifidobacteria added after fermentation. Viability decides everything about handling. The product is filled cold, held under refrigeration through the whole chain, and never pasteurised after fermentation unless the intention is deliberately to make an inactivated version. Counts fall steadily with time and temperature, so the declared shelf life is set by viability rather than by microbiological spoilage.

Common Markets Grades
The first division is between live and heat treated product. Live concentrate must move under a cold chain and carries a short shelf life of weeks to a few months, while a post fermentation pasteurised version, sold as a postbiotic or inactivated fermented drink, is ambient stable but can make no live culture claim. A frozen concentrate is also traded where a long hold is needed before dilution.
Beyond that the grading axes are the substrate, dairy against plant or fruit, the concentration factor expressed as the dilution ratio at which it is drunk, and the declared count per millilitre. Sweetened and unsweetened versions are both sold, sweetened bases usually standardised with sugar, fruit concentrate or a high intensity sweetener. Regulatory Status
In the United States the product is sold as a conventional food or as a dietary supplement depending on the format and the claims. The cultures used are established food organisms with generally recognised as safe status, dairy based versions fall under the standards and hygiene requirements for cultured milk products, and juice based versions come under the juice hazard analysis and critical control point requirements. Statements about digestive or immune benefit are structure and function claims subject to the labelling rules rather than authorised health claims.
In the European Union live cultures are food ingredients rather than additives, so no E number applies. Species with a documented history of use carry qualified presumption of safety status at species level under the European Food Safety Authority framework, while most member states restrict the word probiotic on labels, because no health claim for these cultures carries authorisation under the nutrition and health claims regulation. The joint FAO and WHO guidelines on probiotics in food set the accepted international basis for strain identification and viability declaration, and Codex covers the dairy versions through its standard for fermented milks.
Manufacturing Process
The substrate, whether reconstituted milk, whey permeate, a soy or oat base, or a clarified fruit juice, is standardised for solids and sugar and then heat treated to eliminate competing organisms. It is cooled to fermentation temperature and inoculated with a defined starter culture, and the tank is held at temperature until pH and titratable acidity reach their targets, which for a concentrated base means driving the fermentation further than an ordinary drinking yoghurt would go.
The fermented base is cooled quickly to arrest acidification, then concentrated where the format calls for it, by membrane filtration or by centrifugal separation, both of which raise cell count without the heat that evaporation would apply. Additional freeze dried strains, sugars, stabilisers and flavours are blended in cold. The finished concentrate is filled cold into bottles, bag in box or drums, closed with a low oxygen headspace and moved into refrigerated storage, with viable count assayed on release and again at intervals through shelf life.
