Regulatory Status

Manufacturing Process

Essence manufacture is a reaction operation. A precursor blend of reducing sugar, amino acids, thiamine, protein hydrolysate and a fat or meat substrate is charged to a jacketed pressure reactor, adjusted to a set pH and taken through a defined temperature and time curve above the boiling point of water. The reacted mass is cooled, neutralised and concentrated under vacuum, then blended with heat sensitive top notes, oleoresins and taste actives before being filled as a paste or spray dried onto a maltodextrin and salt carrier.

Compound seasoning manufacture is a dry blending operation that takes the essence as one of its inputs. Salt, monosodium glutamate, nucleotides, sugar, starch, dehydrated vegetable and ground spice are dosed by weight into a ribbon or plough blender, the essence and any oil fraction are sprayed in so that the liquid is distributed before the powder agglomerates, and the blend is homogenised. Where flow or dissolution matters the powder goes on to fluid bed granulation and drying. The blend is sieved, passed over a metal detector and filled into foil laminate bags or lined drums, with each batch checked against a retained sensory reference and against the analytical specification.
