Manufacturing Process
Selenium Enriched Yeast Protein production begins with controlled fed batch fermentation of Saccharomyces cerevisiae in a defined molasses and mineral medium.
During the growth phase, sodium selenite is dosed into the broth at carefully controlled concentrations. The yeast metabolism reroutes part of its sulphur amino acid biosynthesis to incorporate selenium, producing selenomethionine in place of methionine in newly synthesised proteins.
At the end of fermentation the cells are washed to remove residual inorganic selenium and unincorporated selenocompounds. The biomass is then mechanically disrupted, and the protein fraction is recovered by selective extraction and isoelectric precipitation.
The isolated protein is washed, neutralised, spray dried, and milled. Strict analytical controls confirm total selenium, selenomethionine fraction, and the absence of residual inorganic selenium.
