Vanilla seeds are the minute black seeds scraped from the interior of cured vanilla pods, sold to food manufacturers as a visual and aromatic ingredient that signals the presence of real vanilla bean.

Each cured pod contains many thousands of seeds, roughly a quarter of a millimetre across, embedded in a viscous oleoresinous pulp. Commercially the seeds are traded either as a washed and dried free flowing powder of loose seeds or as a seed slurry in which the seeds remain suspended in glycerine, propylene glycol or a sugar syrup. The seeds themselves carry only a small share of the pod's vanillin, most of which sits in the pod wall, so their function is largely visual, with the residual pulp contributing aroma where the seeds have not been exhaustively extracted.

The seed coat is a hard, dark lignified shell that resists heat, acid and mechanical shear, which is why the specks survive baking, freezing and homogenisation intact and remain visible in the finished product. Seeds do not dissolve, so in liquid systems they require a suspending gum or sufficient viscosity to keep them from settling.

Common Markets Grades

The principal distinction is between exhausted and unexhausted seeds. Exhausted seeds are the residue left after pods have been percolated for extract manufacture, so they are close to flavour neutral and are bought purely for appearance; they are the cheaper and more widely traded grade. Unexhausted seeds are scraped from whole cured pods without prior extraction, retain pulp and vanillin and are the more costly grade. Between these sit partially extracted grades sold with a stated vanillin content.

Seeds are further specified by origin, since Madagascar, Indonesian, Ugandan and Papua New Guinean beans differ in seed size and colour intensity, and by form. Dried loose seed is sold with a moisture and speck count specification for dry blending, while seed slurries and pastes are graded by seed loading, typically expressed as a percentage by weight or as specks per gram in the finished application. Sterilised grades treated by steam or by an equivalent validated process are used where the seed is added to a product that receives no further kill step.

Regulatory Status

In the United States vanilla seeds are a component of the vanilla bean and are used as a food ingredient rather than as an additive, so no separate food additive authorisation applies. They are declared in an ingredient statement as vanilla bean seeds, ground vanilla beans or exhausted vanilla beans according to what has actually been used. The related standards of identity for vanilla extract, vanilla flavouring and vanilla powder appear in 21 CFR Part 169, and the labelling rules in 21 CFR 101.22 govern whether a finished product carrying seeds may be described as vanilla or must carry a flavour qualifier, which depends on the flavour actually contributed rather than on the visible specks.

In the European Union vanilla seeds are treated as a food ingredient and, where they are sold as a flavouring preparation from vanilla pods, fall under Regulation (EC) No 1334/2008 rather than the additive framework, so no E number applies. Contaminant limits for foodstuffs, in particular for lead and for the mycotoxins that can occur in cured pods stored under humid conditions, carry through to the seed. Codex has adopted a standard covering vanilla beans and the Joint FAO WHO Expert Committee on Food Additives has evaluated vanillin without raising a safety concern at food use levels.

Manufacturing Process

Production starts with cured vanilla pods, which have already been through killing, sweating, slow drying and conditioning at origin. Where the seeds are a by product of extract manufacture, the pods are first chopped and percolated with aqueous ethanol to remove vanillin and the accompanying aroma compounds, and the spent bean meal leaving the extractor is the feedstock. Where unexhausted seeds are wanted, whole pods are simply split and the pulp and seeds scraped or mechanically stripped from the pod wall.

The recovered material is then separated, since the seeds must be parted from the fibrous pod wall fragments. This is done by wet milling followed by sieving and air classification, or by density separation in water, which uses the difference in size and specific gravity between hard seed and soft fibre. The seed fraction is washed, dewatered on a centrifuge or filter, and either dried under vacuum or in a low temperature belt dryer to a controlled moisture, or wet blended directly into glycerine or syrup to make a slurry. A steam or equivalent pasteurisation step is applied before final sieving, metal detection and packing into lined drums, pails or foil laminate bags.
