White Dextrin
White Dextrin is a low-conversion roasted starch product produced by heating dry starch in the presence of a small amount of acid catalyst at relatively low temperature.
The mild heat treatment causes limited hydrolysis and rearrangement of the starch chains, giving a free-flowing white to pale cream powder with cold-water solubility well above that of the native starch.
It is the standard pyrodextrin grade where colour must remain near-white and the application requires fast wet-out, adhesive tack, and film formation.

Common Markets Grades
White Dextrin is graded by solubility, viscosity, and source starch.
Low-solubility grades (below 50 percent in cold water) retain more native starch character and are favored in adhesive and gummed-paper formats.
High-solubility grades (above 90 percent cold-water solubility) approach a true dextrin and are used in textile sizing and pyrotechnic binders.
Viscosity classes are differentiated by ten-percent solution Brookfield reading and range across light, medium, and heavy bodies.
Source starches include corn (the global standard), tapioca, potato, and waxy maize. Tapioca gives the whitest finish and is preferred for food coating applications.

Regulatory Status
White Dextrin used in food applications is covered as a modified starch under the broader food starch regulations and does not carry an E number when produced by thermal treatment alone.
The U.S. FDA covers food-grade dextrin under 21 CFR 184.1277 with GRAS status.
Industrial-grade and adhesive-grade white dextrin are sold under technical specifications without food-contact certification.
Kosher and Halal certifications exist for food-grade material from approved producers.
Manufacturing Process
White Dextrin is produced by dry-roasting starch in the presence of trace acid.
Cleaned starch is sprayed lightly with dilute hydrochloric or nitric acid to a moisture target of around 3 to 5 percent. The acidified starch is held until the acid and moisture spread evenly, then transferred to a continuous dextrinizer.
The dextrinizer holds the starch at 80 to 120 degrees Celsius with gentle agitation for 1 to 6 hours. The low temperature limits browning and keeps the colour near white.
Hydrolysis dominates over transglycosidation in this temperature window, so the molecular weight drops while colour development remains minimal.
The product is cooled, neutralised with ammonia or sodium carbonate, screened, and packed.
