Dextrose Monohydrate

Dextrose Monohydrate is the hydrated crystalline form of D-glucose, carrying one molecule of water of crystallisation per glucose unit.

It is the most widely produced and traded form of dextrose. The white, free-flowing crystal contains approximately 9 percent water, gives a clean cooling taste on the tongue, and dissolves rapidly into clear neutral solutions.

This is the standard form for food, beverage, fermentation, and general pharmaceutical use, where the small amount of hydration water is acceptable.

Standard food grade dominates the global trade and comes as crystalline powder or fine sugar-like particles.

Pharmacopoeia grade meets USP, Ph. Eur., and JP monographs for dextrose monohydrate and is used in oral solid dose and oral liquid pharmaceutical preparations.

Fermentation grade may carry slightly looser colour and ash specifications but tighter limits on inhibitory ions, and ships as tanker liquid or bulk crystal.

Agglomerated free-flow grade is preferred for dry-blend operations where dust suppression and uniform mixing matter.

Dextrose Monohydrate appears as a monograph in the USP-NF, the European Pharmacopoeia, the Japanese Pharmacopoeia, and the Chinese Pharmacopoeia.

The U.S. FDA covers it under GRAS for food use in 21 CFR 184.1857.

Codex Alimentarius lists it as a general carbohydrate sweetener with no specified intake limit. JECFA has not set an ADI on safety grounds.

Kosher, Halal, non-GMO, and organic certifications are routinely available depending on the source starch and supplier.

Manufacturing Process

Dextrose Monohydrate is crystallised from a high-DE glucose syrup at temperatures below 50 degrees Celsius.

Starch is liquefied and saccharified to near-complete conversion (95 to 96 DE). The syrup is refined through carbon and ion exchange, concentrated, then transferred to crystallisers.

The syrup is supersaturated, seeded with monohydrate crystal, and cooled progressively over many hours to build large, well-formed crystals.

The crystal slurry is centrifuged and washed with cold water. Mother liquor is recovered, reworked, and partially recycled.

The wet crystal is dried in a rotary or fluid-bed dryer to a target moisture of around 8.5 to 9.5 percent, sieved, and packed.
