Common Markets Grades

There are two grades of Aluminium Dihydrogen Phosphate, food and technical.

Food grade is a fine white powder with controlled neutralising value, particle size, and reactivity profile. The reactivity is measured by dough rate of reaction tests at standardised temperatures.

Technical grade dominates volume and serves as a high temperature binder. It is produced both as crystalline solid and as concentrated aqueous solution for spray application to refractory boards, ceramic fibres, and abrasive wheels.

Regulatory Status

Aluminium based leavening acids have come under increasing regulatory scrutiny over the past two decades.

In the European Union aluminium containing additives are tightly controlled under regulation 1333/2008 and many uses have been withdrawn or limited. Where permitted, the additive is referenced through its phosphate parent E numbers.

The U.S. Food and Drug Administration permits aluminium phosphates as GRAS substances for use as leavening agents under 21 CFR part 182.

Several major food manufacturers have voluntarily reformulated to aluminium free leavening systems based on sodium acid pyrophosphate, calcium acid pyrophosphate, or monocalcium phosphate. The salt remains in use mainly in specialty industrial bakery applications and outside the food sector.

Manufacturing Process

Aluminium Dihydrogen Phosphate is produced by reacting aluminium hydroxide or freshly precipitated aluminium oxide trihydrate with phosphoric acid in a molar ratio that favors the mono-aluminium tri-dihydrogen phosphate structure.

The reaction Al(OH)₃ + 3 H₃PO₄ → Al(H₂PO₄)₃ + 3 H₂O runs in stirred reactors at moderate temperature. The resulting viscous syrup is either spray dried to a free flowing powder or sold as a 50 percent solution.

Food grade material is made from purified aluminium hydroxide and food grade phosphoric acid with strict control of arsenic, lead, and fluoride.
