Benzoic Acid
Benzoic Acid is the simplest aromatic carboxylic acid and the parent compound of the benzoate preservative family.
It has the molecular formula C₇H₆O₂, a molar mass of 122.12 g/mol, and a melting point of 122 °C. The substance occurs naturally in cranberries, prunes, cloves, and cinnamon, as well as in the gum benzoin resin from which it takes its name.
Solubility in water is modest (about 3.4 g per litre at 25 °C), so direct use in fully aqueous systems is limited. In low-pH and fat-containing foods it dissolves well enough to act as an effective antimicrobial.

Regulatory Status
Benzoic Acid carries the European food additive number E210 and is authorised in Regulation (EU) No 1129/2011 at the same maximum levels as its sodium, potassium, and calcium salts. Use is restricted to defined food categories such as low-pH beverages, preserved fruit and vegetables, and certain sauces.
In the United States it is affirmed GRAS for direct food use up to 0.1 percent under 21 CFR 184.1021, and is also permitted as an indirect food additive in food-contact materials.
JECFA has evaluated benzoic acid and benzoates together as a group and concluded they share a common toxicological basis.
USP, Ph. Eur., JP, and BP all publish pharmacopoeial monographs. Pharmaceutical grade is widely used in pharmacopoeia topical antifungal preparations and as a buffering or antimicrobial excipient.
Manufacturing Process
Nearly all commercial benzoic acid is made by catalytic liquid-phase oxidation of toluene with air.
The reaction runs at 140 to 160 °C and 2 to 5 bar in the presence of a soluble cobalt or manganese naphthenate catalyst, with acetic acid often used as a co-solvent. Toluene conversion per pass is kept moderate to limit over-oxidation to carbon dioxide.
Crude product is separated from unreacted toluene, water, and catalyst by distillation. The residue is then purified by vacuum distillation or solvent recrystallisation to remove coloured byproducts and trace halogens.
Food and pharmaceutical grades are obtained by an additional sublimation or recrystallisation step that targets sub-ppm levels of phthalic acid and other oxidation byproducts.
