Sodium Propionate
Sodium Propionate is the sodium salt of propionic acid, used as an antimicrobial preservative in bakery products and selected dairy applications.
The compound has the molecular formula C₃H₅NaO₂ and a molar mass of 96.06 g/mol. Solubility in water is very high (around 100 g per 100 mL at 20 °C), substantially higher than calcium propionate, which simplifies its incorporation into liquid systems.
The substance acts on the same mechanism as the rest of the propionate family, primarily inhibiting moulds and rope-forming bacilli through cytoplasmic acidification.

Regulatory Status
Sodium Propionate carries the European food additive number E281. The substance is currently not permitted as a food additive in the European Union, where authorised propionate use is limited to calcium and potassium salts in defined bakery categories.
In the United States it is affirmed GRAS for direct food use under 21 CFR 184.1784, with no specific upper limit beyond good manufacturing practice. Like all propionates it is generally avoided in fermented foods because it can interfere with yeast and lactic-acid starter cultures.
JECFA evaluates the propionate family as a single toxicological group based on their conversion to free propionic acid, which is also produced endogenously in the human colon.
USP publishes a pharmacopoeial monograph. The substance is used in selected ophthalmic and topical antifungal preparations.
Manufacturing Process
Sodium propionate is made by neutralising propionic acid with sodium hydroxide or sodium carbonate in aqueous solution.
The propionic acid feedstock is produced industrially by hydroformylation of ethylene with carbon monoxide and hydrogen to give propanal, which is then oxidised to propionic acid. A smaller volume is produced by aerobic oxidation of propanol or by fermentation with Propionibacterium species.
The neutralisation is run close to the equivalence point so the finished salt has a near-neutral pH in solution. The clarified solution is decolorised with activated carbon and filtered.
The product is recovered by spray drying or by crystallisation followed by centrifugation and drying. Material is typically milled to a uniform powder before packaging under dry conditions.
