Carrot Seed Oil is the steam-distilled essential oil of the dried fruits (botanically seeds) of Daucus carota Linnaeus, in either the wild form (subsp. carota) or the cultivated form (subsp. sativus).
The oil is a pale yellow to amber, slightly viscous liquid with a warm, dry, earthy odour. Its character is driven by the sesquiterpene alcohol carotol, which typically accounts for 35 to 75 percent of the profile.

Common Markets Grades
Carrot Seed Oil is graded primarily by carotol assay and botanical subspecies.
Wild-harvested oil from France, Hungary, and Poland delivers the highest carotol values, often above 60 percent, and is the reference grade for skincare formulation.
Cultivated carrot seed oil from India and Egypt covers the mid-tier and typically assays 35 to 50 percent carotol with a higher α-pinene background.
Suppliers also offer CO₂ totals, which combine the volatile distillate with the non-volatile beta-carotene-rich fixed oil from the seed. These should not be confused with the cosmetic ingredient called carrot seed carrier oil, which is a vegetable oil infusion and is not an essential oil.

Carrot Seed Oil is approved as a flavouring substance and cosmetic ingredient in all major jurisdictions.
In the U.S., 21 CFR 182.20 lists it as GRAS for flavour use.
The EU permits it as a natural flavouring under Regulation (EC) 1334/2008, FL 14.005, and lists it in the CosIng database under the INCI name Daucus Carota Sativa (Carrot) Seed Oil.
JECFA has reviewed the principal constituents (carotol, daucol, α-pinene, sabinene) and raised no safety concerns at typical food-use levels.
IFRA does not apply restrictive limits to carrot seed oil in fragrance applications. Kosher, Halal, and organic certifications exist for the cultivated grades.
Manufacturing Process
Mature carrot fruits are harvested when the umbels turn brown and fully dry, usually 8 to 10 weeks after flowering.
The fruits are threshed, cleaned, and crushed lightly to break the pericarp before distillation. Steam distillation runs 6 to 10 hours at atmospheric pressure.
Yields are modest, in the range of 0.8 to 1.6 percent of dry seed weight.
The crude oil is decanted, dried over anhydrous sodium sulphate, and filtered. Some producers run a polishing rectification under vacuum to remove discolored top fractions and standardise carotol assay.
Wild-harvested material is typically produced in small-batch farm stills in Provence and the Carpathian basin. Cultivated material from India and Egypt is processed at larger industrial distilleries serving multiple seed crops in rotation.
