Dehydrated Garlic Flakes are sliced cloves of Allium sativum that have been dried to a low-moisture, free-flowing form with a recognizable flat, irregular flake shape.

The flake format sits between coarse minced and whole-clove formats. Slices typically measure 5 to 15 mm across with a thickness of 1 to 3 mm, giving the product enough surface area to rehydrate quickly while keeping a visible identity in the finished dish.

Garlic flakes are sorted by slice dimension, colour, and broken-piece content.

Premium grades show uniform ivory colour with minimal scorch marks, less than 2 percent fines, and a flake size of 8 to 15 mm. Standard food-service grades allow more variability in size and a higher proportion of broken pieces.

Specifications usually call out moisture (typically 6 percent maximum), volatile oil (a marker of pungency), and microbiological limits. Sulphur dioxide is occasionally added to preserve colour in lower grades, while sulphite-free flakes are the norm for clean-label customers.

Air-dried flakes are the commodity standard. Freeze-dried flakes serve retail seasoning jars and chefs who want a sharper, fresher rehydration profile.

Regulatory Status

Dehydrated garlic flakes are classified as a culinary spice and are not subject to additive regulation in most markets.

The U.S. FDA places dried garlic under its general spice and seasoning provisions. The American Spice Trade Association publishes voluntary cleanliness specifications that cover insect fragments, foreign matter, and ash.

European Union pesticide MRLs for Allium cepa group commodities apply. The European Spice Association issues quality minima for moisture, ash, and volatile oil.

Kosher and Halal certifications are routinely available, and major suppliers offer organic-certified flakes from contract-grown crops in China, India, and Spain.

Manufacturing Process

Cured garlic bulbs are broken into individual cloves and peeled with compressed air or rubber-roller systems. The peeled cloves move to slicing lines fitted with rotary blade heads that cut to the target thickness.

The slices are spread on perforated trays or moving belts and passed through a multi-zone tunnel dryer. Inlet zones run at moderate temperature to drive surface moisture without case-hardening. Subsequent zones step the temperature up to finish the product at 5 to 7 percent moisture.

Slow, gentle drying is essential. Aggressive drying causes browning, off-flavours, and a loss of pungency. Most processors aim for a total drying time of 6 to 10 hours.

After drying, flakes are cooled, sieved to remove fines and oversize, and inspected on optical sorters to reject scorched, green, or foreign material. Steam sterilisation or cold plasma treatment is typically used before final packing to meet microbiological specifications without damaging the flakes.
