The whole format is the traditional trading unit of the international ginger market. Whole pieces preserve aroma longer than ground forms because the protective surface area is minimised and the cell structure that holds volatile oil remains largely intact.

Whole dried ginger is graded by origin, peeling, and physical appearance.
Cochin and Calicut ginger from Kerala set the historical quality reference, with a high volatile-oil content and a distinct lemony top note. Nigerian whole ginger is more pungent and lower in oil. Chinese whole ginger covers the largest export volume in the medium-quality bracket. Jamaican ginger commands a premium for its delicate aroma.
Peeled (decorticated) whole ginger is sold under names such as bleached, limed, or coated, depending on the surface treatment used to brighten the skin. Unpeeled rough ginger is the lower-cost trade grade and is preferred by extractors and herbal manufacturers who do not value cosmetic appearance.
Trade specifications include moisture (typically 10 to 12 percent maximum), volatile oil (1.5 to 2.5 percent minimum depending on origin), ash, and acid-insoluble ash. Whole ginger is graded visually for broken pieces, mould, and insect damage.

The European Pharmacopoeia, the United States Pharmacopeia, and the Chinese Pharmacopoeia all carry monographs for Zingiberis rhizoma covering identity, purity, and gingerol content. These monographs are used to qualify whole dried ginger destined for herbal product manufacture. Organic and Halal certifications are widely available.
Manufacturing Process
Mature rhizomes are lifted from the soil 8 to 10 months after planting, when the leaves yellow and dry back. The freshly dug hands are cleaned of soil and trimmed of aerial stems and fibrous roots.
For unpeeled whole ginger, the washed rhizomes are spread on raised drying floors or in solar tunnels to lose moisture slowly. Total drying time can run 5 to 7 days under the sun, or 20 to 30 hours in a mechanical dryer set below 60 C.
For peeled grades, the cleaned rhizomes are scraped, pared, or treated with a brief calcium-hydroxide dip before drying. Peeling removes the corky skin and the underlying oleoresin cells, which improves colour but lowers volatile-oil content. Traders accept the trade-off when the buyer values appearance.
The finished whole pieces are graded by hand or on optical lines for size, broken-piece content, and mould. They are then packed in jute bags or, for premium grades, in moisture-barrier liners to slow aroma loss during ocean transit.
