Disodium Glycyrrhizinate is the di-sodium salt of glycyrrhizic acid, assigned CAS number 71277-79-7 and sold as a white to pale yellow crystalline powder.
Two of the three carboxyl groups of the glycyrrhizinate anion are neutralised with sodium, leaving the third protonated. The salt is widely used in Japan, where it is the dominant kanzo-derived sweetener and umami enhancer for soy sauce, miso, and pickled vegetables.

Disodium Glycyrrhizinate is graded by HPLC assay at 90 percent, 95 percent, and 98 percent on a dry basis.
The 95 percent grade serves Japanese soy sauce, miso, and shoyu producers as the standard kanzo enhancer.
A 98 percent grade is preferred for clear beverages, mouthwashes, and pharmaceutical syrups where higher purity is needed to avoid colour drift.
Sodium content is tightly specified around 5 to 6 percent by mass, which corresponds to two sodium ions per glycyrrhizinate molecule. Sulfated ash, heavy metals, and residual solvents are all controlled to Japanese food additive standards.

In the European Union the substance falls under the same intake framework as other glycyrrhizinate salts, with EFSA opinions on glycyrrhizin reaffirming guidance to keep habitual intake below approximately 100 mg per day.
The United States Food and Drug Administration recognises licorice and its sodium derivatives as GRAS under 21 CFR 184.1408 at the use-level limits set for licorice extract.

Manufacturing Process
Disodium Glycyrrhizinate is prepared by partial neutralisation of glycyrrhizic acid with two molar equivalents of sodium hydroxide or sodium carbonate.
Free glycyrrhizic acid is first isolated from a hot-water licorice extract by sulphuric acid precipitation, washed, and recrystallised. The purified acid is then suspended in water and the alkali is dosed slowly until the pH stabilises around 6.5 to 7.0, the endpoint that corresponds to the di-salt.
The solution is decolorised with activated carbon, polish-filtered, concentrated under vacuum, and finally spray-dried.
Final lots are tested by HPLC for assay, by flame atomic absorption for sodium content, and by pharmacopoeial methods for heavy metals, residual solvents, and microbiological purity.
