Maltitol

Maltitol is a disaccharide sugar alcohol valued as a bulk sweetener that closely mimics the taste, mouthfeel, and bulk of sucrose while delivering reduced glycemic and caloric load.

The molecule is 4-O-alpha-D-glucopyranosyl-D-sorbitol with formula C₁₂H₂₄O₁₁ and CAS 585-88-6. It carries 80 to 90 percent of the sweetness of sucrose with no off-notes or aftertaste.

Maltitol reaches the market in two formats, crystalline powder and concentrated syrup.

Crystalline maltitol at 98 to 99 percent purity covers standard, fine and powdered grades for chocolate, hard-boiled candy, chewing gum coatings, and tablet manufacture.

Maltitol syrup is a clear non-crystallising solution typically at 75 percent maltitol with the balance as sorbitol and higher hydrogenated saccharides, used in soft confectionery, chewing gum, and bakery fillings.

Pharmaceutical-grade material complies with USP-NF, Ph. Eur., and JP monographs. Food-grade material meets FCC and JECFA specifications.

Regulatory Status

Maltitol holds broad regulatory approval as a food additive.

In the European Union it carries E number E965, with E965(i) for crystalline maltitol and E965(ii) for the syrup form. EU labelling requires the statement excessive consumption may produce laxative effects when a serving delivers more than 10 grams of polyol.

The U.S. Food and Drug Administration treats maltitol as GRAS for use as a nutritive sweetener and bulking agent. The agency has accepted a labelling caloric value of 2.1 kcal per gram.

JECFA has evaluated maltitol and maltitol syrup as safe for food use. Pharmacopoeial monographs appear in USP-NF, Ph. Eur., JP, and BP.

The substance is Halal and Kosher certifiable and is not a recognised food allergen.

Manufacturing Process

Maltitol is produced by the catalytic hydrogenation of maltose.

The starting material is a high-maltose syrup obtained by enzymatic hydrolysis of starch using beta-amylase or pullulanase. The maltose content is enriched to 90 percent or higher through fractionation and chromatographic separation.

The enriched syrup is hydrogenated under hydrogen pressure of 40 to 150 bar at 100 to 140 degrees Celsius over a Raney nickel or supported nickel catalyst. The reducing end of the maltose disaccharide is converted from a glucose unit to a sorbitol unit, yielding maltitol.

The product solution is filtered to remove catalyst, demineralized on cation and anion exchange resins, and decolorised with activated carbon. Concentration by vacuum evaporation gives maltitol syrup directly.

The crystalline grade requires additional purification, controlled cooling crystallisation with seeding, centrifugation, drying, and milling to the target granulation.
