Duck Flavour
Duck flavour is a compounded savoury flavouring formulated to deliver roast, braised or stewed duck character in a finished food. Most industrial grades are thermal process flavourings, in which the aroma is generated by heating a reaction mixture rather than by blending aroma chemicals alone, so that the chemistry mirrors what happens when the bird is cooked.
What distinguishes duck from chicken in flavour terms is largely lipid. Duck carries a much higher proportion of fat, particularly under the skin, and its fatty acid profile is richer in oleic and linoleic acid, so the aldehydes and other carbonyls formed when that fat is heated give the gamey, rich, slightly livery character that identifies the species. A formulator therefore includes rendered duck fat or a lipid fraction in the reaction rather than relying on the amino acid and sugar chemistry alone. The savoury base and the roasted notes come from the Maillard reaction between a protein hydrolysate or yeast extract, reducing sugars and sulphur bearing precursors such as cysteine and thiamine, which generates the furanthiols, pyrazines and sulphur heterocycles common to all cooked meat.
The trade sells the flavour as a brown paste, an oil dispersed liquid and a spray dried powder. Paste and powder carry the reaction body, while a topping liquid flavour is usually added on top to restore the volatile notes lost in drying.

Common Markets Grades
Grades separate by profile first, since Peking style roast duck, braised duck, salted or cured duck, duck broth and smoked duck are formulated as separate products with different reaction conditions and top notes, and none substitutes for another. The roast profile in particular relies on browning notes and on skin character that a broth profile does not carry.
They separate second by raw material. Grades built on duck meat extract, duck fat or hydrolysed duck protein carry genuine species character and require the corresponding species declaration and halal certification where relevant, while grades built on vegetable protein, yeast extract and vegetable fat reach an approximation of the profile without any animal material and can serve vegetarian and analogue work. Form is the third axis, with paste for wet systems, oil dispersion for seasoning oils and frying, and spray dried or encapsulated powder for dry blends and instant products. Heat stable versions are formulated for retort and extrusion, and concentration is expressed as a dosage rate rather than an assay.

Regulatory Status
In the United States the individual flavouring substances used are covered by the FEMA GRAS programme, and the hydrolysed proteins, yeast extracts and meat extracts forming the reaction substrate are food ingredients rather than additives. Labelling follows 21 CFR 101.22, which determines whether the declaration reads natural flavour or artificial flavour, and hydrolysed protein must be named by its source. Where the product contains poultry material above the applicable threshold it comes under United States Department of Agriculture Food Safety and Inspection Service jurisdiction, which controls establishment inspection, label approval and product naming.
In the European Union thermal process flavourings form a defined category under Regulation (EC) No 1334/2008, which fixes the reaction temperature and time conditions and the permitted starting materials and sets maximum levels for certain substances that can arise during heating. Product made within those conditions requires no individual authorisation and carries no E number. Poultry raw material requires an establishment approved under Regulation (EC) No 853/2004 and full traceability. Where acid hydrolysed vegetable protein is used, 3-monochloropropane-1,2-diol and its esters are the routine release test, controlled by alkaline treatment of the hydrolysate. Codex is relevant through its general guidelines for the use of flavourings and its code of hygienic practice for meat.
Manufacturing Process
The reaction substrate is prepared first. Vegetable protein or, for a species specific grade, duck meat and frame material is hydrolysed with proteases or by acid to release free amino acids and peptides, or a yeast extract is used in its place. The hydrolysate is neutralised, clarified and standardised for amino nitrogen, then charged to a jacketed reactor with reducing sugars such as xylose and glucose, cysteine hydrochloride, thiamine and rendered duck fat or another lipid source called for by the formula.
The mixture is adjusted to a mildly acid pH and heated under agitation, typically between ninety five and one hundred and twenty degrees Celsius for anything from half an hour to two hours, during which the colour darkens and the cooked poultry aroma develops. Lipid oxidation runs alongside the Maillard chemistry in this step and is the source of the species character, so fat quality and reaction time are controlled tightly to keep the batch on the right side of rancidity. The batch is cooled quickly to fix the profile, then blended with salt, umami salts, carriers and topping flavours. Paste grades are filled directly, oil grades are dispersed and homogenised into refined oil, and powder grades are homogenised with maltodextrin or modified starch and spray dried, then agglomerated where free flow is wanted. Release is by sensory panel against a retained reference supported by gas chromatography, with nitrogen, salt, moisture and peroxide value as the analytical checks.
