Hydrolyzed Lecithin
Hydrolysed Lecithin is an enzymatically modified phospholipid emulsifier in which a fraction of the native phospholipid molecules has been cleaved by phospholipase A2 to produce lysophospholipids. The resulting mixture carries a shifted hydrophilic-lipophilic balance favoring oil-in-water systems.
The product is commonly produced under the LECITASE trade name when manufactured with Novozymes phospholipase enzymes. It carries the European food additive number E322 within the broader lecithin class.

Common Markets Grades
Hydrolysed Lecithin is graded by degree of hydrolysis and lysophospholipid content.
Lightly hydrolysed grades carry 10 to 25 percent lysophospholipids and serve general bakery and confectionery use. Moderately hydrolysed grades carry 25 to 50 percent lysophospholipids and serve instant beverage and protein dispersion applications.
Highly hydrolysed grades carry above 50 percent lysophospholipids and are used in demanding oil-in-water emulsion systems such as dressings and clinical nutrition.
Fluid, powdered, and granulated formats exist across all degrees of hydrolysis, with sunflower-source grades produced for allergen-free segments alongside the standard soy version.

Regulatory Status
Hydrolysed Lecithin is covered under the lecithin additive class with the European food additive number E322 in the European Union for general food use at quantum satis.
The United States Food and Drug Administration treats hydrolysed lecithin under the general lecithin GRAS listing in 21 CFR 184.1400. The phospholipase A2 enzyme used in production is itself recognised as Generally Recognized as Safe through formal GRAS notifications.
JECFA reviewed lecithins as a class and concluded that a numerical intake limit was not required.
Source allergen labelling follows the parent oilseed. Soy-derived hydrolysed lecithin requires a soy declaration in most major markets, while sunflower-derived material does not. Kosher and Halal certifications are widely available.
Manufacturing Process
Hydrolysed Lecithin is produced by enzymatic treatment of standard fluid lecithin with phospholipase A2.
The fluid lecithin is dispersed in water with controlled pH between 7 and 8 and warmed to 40 to 60 degrees Celsius. Phospholipase A2 enzyme is added at a defined dose, often sold under the LECITASE name from Novozymes.
The enzyme cleaves the sn-2 fatty acid ester bond on a controlled fraction of the phospholipid molecules, releasing free fatty acids and producing lysophospholipids that carry only a single fatty acid chain per glycerol unit. Reaction time runs from 4 to 12 hours depending on the target degree of hydrolysis.
The reaction is stopped by heat inactivation of the enzyme. The product is then dewatered, neutralised, dried under vacuum, and standardised for acid value and lysophospholipid content.
