Jasmine Essential Oil

Jasmine essential oil is the concentrated aromatic extract obtained from the flowers of Jasminum grandiflorum and Jasminum sambac, sold to the flavour and fragrance trade mainly as a solvent-extracted absolute rather than as a distilled oil. The blossoms carry too little volatile material, and their aroma is too heat sensitive, for steam distillation to be commercially viable, so material traded under this name is normally a concrete or an absolute.

The absolute is a viscous dark orange to reddish brown liquid with an intense floral odour carrying green, fruity and animalic facets. Its character comes from benzyl acetate, benzyl benzoate, linalool, indole, methyl anthranilate, cis-jasmone and methyl jasmonate, the last two present at low levels but disproportionately important to the profile.

The material is soluble in ethanol and in fixed oils and insoluble in water, so food applications work through ethanol or propylene glycol dilutions dosed at parts per million. It darkens and thickens on exposure to air and light, and is held cold in filled containers under nitrogen.

Common Markets Grades

Two botanical origins are traded separately. Jasminum grandiflorum gives the fruitier, more tea-like profile associated with Indian and Egyptian material, while Jasminum sambac gives a heavier, greener and more indolic oil and is the type used for scenting Chinese jasmine tea. Within each origin the concrete, a waxy semi-solid holding the plant waxes, is sold as an intermediate, and the absolute, from which the waxes have been removed, is the finished trading grade.

Supercritical carbon dioxide extracts are offered for applications that cannot tolerate residual hydrocarbon solvent. Because the pure absolute is dosed in fractions of a percent, most flavour and cosmetic buyers take standardised dilutions at 1, 5 or 10 percent in ethanol, propylene glycol or triethyl citrate. Compounded jasmine bases, in which natural absolute is extended with synthetic benzyl acetate and jasmonates, are a separate class of product and are labelled as compounded rather than as absolute.

Regulatory Status

In the United States 21 CFR 182.20 lists jasmine among the essential oils, oleoresins and natural extractives that are generally recognised as safe for their intended use in food, and the material also holds FEMA GRAS status as a flavouring substance. There is no separate food additive petition covering it, and use levels are self-limiting because of the odour intensity.

In the European Union jasmine absolute is handled as a natural flavouring preparation under Regulation (EC) No 1334/2008 rather than as a food additive, so it carries no E number. Cosmetic and fragrance use is governed by the IFRA standards, which set restrictions for the material on the basis of its sensitising constituents, and by the allergen labelling requirements of the EU Cosmetics Regulation for declarable components such as linalool and benzyl benzoate. Residual solvent in solvent-extracted grades is controlled under the extraction solvents framework.

Manufacturing Process

Flowers are picked by hand at night or before dawn, when the buds have just opened and the volatile output is highest, and are extracted the same day because the aroma degrades within hours of picking. The blossoms are loaded into stationary or rotary extractors and washed with hexane at close to ambient temperature in several successive charges. The combined miscella is concentrated under vacuum to strip the solvent, leaving the concrete, a waxy orange mass representing roughly 0.25 to 0.3 percent of the flower weight.

The concrete is dissolved in warm ethanol, then chilled to about minus 10 to minus 15 degrees Celsius so the plant waxes and paraffins crystallise out, and the cold solution is filtered. Ethanol is recovered under reduced pressure at low temperature to give the absolute, typically half the weight of the concrete charged. The finished oil is polish filtered, tested for residual hexane, and blended across lots to hold a consistent odour profile before packing.
