Pomegranate Concentrate

Pomegranate concentrate is the juice of Punica granatum arils, concentrated under vacuum to a high solids liquid and used as a beverage base, a colour and flavour source and a supplement raw material.

The juice comes from the arils, the fleshy seed coats packed inside the leathery rind, and the way those arils are separated determines almost everything about the finished product. Juice pressed from arils alone is bright red, moderately astringent and clean in flavour, while juice pressed from whole fruit carries punicalagins and other hydrolysable tannins leached from the rind and inner membranes, which makes it far more astringent and much higher in measured polyphenol content. Single strength juice runs 14 to 17 Brix with a titratable acidity of 1.0 to 2.0 percent as citric acid. Colour is anthocyanin based, dominated by cyanidin and delphinidin glycosides, and it is the least stable attribute of the product.

Concentrate is traded at 65 to 70 Brix as a deep red to reddish brown viscous liquid, filled aseptically or held frozen. It reconstitutes fully in water. Anthocyanin degradation and browning under warm storage are the practical shelf life limits, so evaporation is run at low temperature and the material is kept cold and dark.

Common Markets Grades

The first distinction is aril pressed against whole fruit pressed juice, since the two differ in astringency, colour and polyphenol content and are priced differently, with whole fruit material favoured by the supplement trade for its punicalagin content and aril juice favoured for beverages. The second is clarified concentrate, depectinised, fined and filtered to a bright liquid, against cloudy concentrate carrying fine suspended solids.

Lots are bought on Brix, titratable acidity, colour by absorbance or as total anthocyanin content, and increasingly on total polyphenols or punicalagin content by chromatography. Sweet and sour cultivars are declared separately because the acid level varies widely. Authenticity is a defining specification issue for this material: because the concentrate is expensive and its colour is easy to imitate, sugar profile, organic acid profile, stable isotope ratio and anthocyanin fingerprint testing are routine, and adulteration with apple, grape or aronia juice and with added sugars is a recurring problem in the trade. Organic certified lots and lots segregated by origin and crop year are traded separately.

Regulatory Status

In the United States pomegranate juice and concentrate are conventional foods and dietary supplement ingredients, and processors operate the hazard analysis and critical control point plan required by 21 CFR Part 120. The Brix reference value published for pomegranate establishes single strength for reconstitution and for percentage juice declaration. Health claims are the enforcement pressure point for this category, since claims about heart disease, prostate cancer and other conditions made for pomegranate beverages have been the subject of regulatory and advertising enforcement action, and claims that cross from structure or function into disease treatment bring a product within the drug definition. Economically motivated adulteration of pomegranate juice is a documented food fraud concern and is addressed in food safety plans as a vulnerability.

In the European Union pomegranate juice and concentrate fall under the Fruit Juice Directive as amended, with a minimum reconstitution Brix set for the species, and any health claim on the finished product must be an authorised claim under the nutrition and health claims regulation. Codex covers the material through its general standard for fruit juices and nectars. Authenticity assessment against the fruit juice industry reference guidelines is standard practice in the European trade, and pesticide residue and heavy metal limits of the destination market apply to the incoming fruit.

Manufacturing Process

Fruit is received, washed and sorted, then either opened and deariled on a machine that cracks the rind and separates the arils on a vibrating screen and air stream, or crushed whole for the whole fruit route. Aril separation is the more expensive path and gives the cleaner juice. Arils are pressed gently on a belt or bladder press, since hard pressing forces bitter compounds out of the seeds, while whole fruit is pressed on a screw or hydraulic press that necessarily extracts rind tannins along with the juice.

Raw juice is screened and centrifuged, then dosed with pectinase and held so that the pectin breaks down and the juice will filter. Clarified grades are fined with gelatine and silica sol, which also reduces astringency by binding tannin, and filtered on diatomaceous earth or through a crossflow membrane. The juice is deaerated and concentrated in a multiple effect falling film evaporator under vacuum at a low boiling temperature, or partly by reverse osmosis where anthocyanin retention is critical, with aroma stripped and returned where the specification calls for it. Concentrate is drawn at target Brix, pasteurised, cooled rapidly and filled aseptically or drum frozen.
