Potassium Pyrophosphate
Potassium Pyrophosphate is the common-trade name for tetrapotassium pyrophosphate, the fully neutralised potassium salt of pyrophosphoric acid with the formula K4P2O7. The two names are used interchangeably in technical and regulatory documentation.
The salt is a white free-flowing powder or concentrated liquid that dissolves rapidly in water to a strongly alkaline solution near pH 10.2 at one percent concentration. It is one of the main means of reducing sodium in cured meat, processed cheese, and dairy systems.

Common Markets Grades
Three formats of potassium pyrophosphate reach the market: dry powder, dry granular, and a 60 percent liquid.
Food-grade material conforms to FCC and E 450(v) purity specifications. The assay minimum is 95 percent K4P2O7 on a dry basis.
Liquid grades dominate the meat and processed-cheese segments because of their ease of dosing and dust-free handling. The 60 percent solution is the standard industry format in practice.
Industrial and detergent grades have wider tolerances on heavy metals, iron, and water-insoluble matter, and are used in liquid laundry and dishwashing builders.
The salt is produced exclusively as the anhydrous compound. No stable hydrate form exists for the potassium analogue, unlike the sodium decahydrate.

The European Union lists it as E 450(v) within the diphosphate sub-family of phosphate additives. The U.S. FDA recognises it under 21 CFR 182.1810 (GRAS) and within the general phosphate sequestrant entries.
JECFA evaluates the substance within its group assessment of phosphate additives.

The dual naming convention (potassium pyrophosphate and tetrapotassium pyrophosphate) is recognised in all major regulatory frameworks. Manufacturers may choose either name on technical data sheets and ingredient declarations, with potassium pyrophosphate slightly more common in food applications and tetrapotassium pyrophosphate slightly more common in industrial and detergent applications.
Manufacturing Process
Potassium pyrophosphate is produced by thermal condensation of dipotassium orthophosphate, with the same process chemistry as tetrapotassium pyrophosphate because the two names describe the same compound.
Dipotassium orthophosphate is prepared by reacting food-grade phosphoric acid with potassium carbonate at a 1:2 mole ratio. The intermediate is highly soluble, so most plants run the condensation step as a slurry calcination rather than from a fully dried feedstock.
Calcination at 400 to 500 degrees Celsius in continuous rotary, fluidised-bed, or belt furnaces drives the condensation. Two orthophosphate units join with the release of one water molecule, forming the P2O7 pyrophosphate anion bridged by a single oxygen.
The calcined product is cooled, milled, sieved, and either packaged directly as dry powder or dissolved in deionised water at controlled temperature to produce the 60 percent liquid grade.
The liquid is polished by filtration before packaging to remove any insoluble residue and to ensure clarity in dosing pumps.
