Resistant Maltodextrin

Resistant Maltodextrin is a soluble dietary fibre produced from food starch by hydrolysis followed by thermal and enzymatic rearrangement.

The rearrangement introduces random α-1,2, α-1,3, β-1,2, and β-1,3 glucosidic bonds that human digestive enzymes cannot cleave, so the molecule passes through the small intestine intact and reaches the colon as a fermentable fibre.

It is a clear, low-viscosity, mildly sweet white powder. The most familiar brand is Fibersol-2 from Matsutani.

Resistant Maltodextrin is graded by dietary fibre content measured by AOAC 2001.03 or AOAC 2009.01.

Standard grade declares around 85 percent dietary fibre on a dry basis, with the balance being digestible saccharides.

High-purity grade reaches 90 percent or more fibre, suitable for fibre-claim beverages with low calorie targets.

Both spray-dried powder and clear liquid concentrate (70 to 75 percent solids) are commercially available.

Low-colour, low-odour pharmaceutical grades exist for medical nutrition and clinical study use.

Regulatory Status

Resistant Maltodextrin is recognised as a dietary fibre in the United States. The FDA confirmed in 2018 that soluble corn fibre and resistant maltodextrin both qualify as dietary fibre for labelling under the revised Nutrition Facts panel.

EFSA has issued favorable scientific opinions on its safety as a novel carbohydrate ingredient.

The leading commercial form, Fibersol-2, holds self-affirmed GRAS status in the U.S. and is widely accepted in Japanese and Korean functional food channels.

Kosher and Halal certifications are standard. Non-GMO and organic-source variants exist from tapioca.

Manufacturing Process

Resistant Maltodextrin is produced from corn or tapioca starch through a three-step process.

Starch is first hydrolysed to a low-DE dextrin. The dextrin is then pyrolyzed under acid conditions, which scrambles the original α-1,4 and α-1,6 bonds into a mixture that includes non-digestible linkages.

The pyrodextrin is treated with α-amylase and amyloglucosidase to remove the remaining digestible chains, leaving the resistant fraction.

The hydrolysate is purified by chromatography, decolorised, demineralized, and spray-dried.
