Sanxan Gum
Sanxan Gum is a microbial exopolysaccharide produced by aerobic fermentation of Sphingomonas sanxanigenens. The polymer was identified and characterised in China in the early 2010s and is one of the newest commercial gums on the market.
The molecule is a high-molecular-weight, anionic polysaccharide that gives unusually strong gels at low concentration and offers good acid, salt, and heat tolerance.

Sanxan Gum comes in two grades, food and industrial.
Food-grade sanxan is the standard for confectionery jellies, dairy desserts, and processed meat applications, with viscosity in the 1,500 to 3,000 cP range at 1 percent.
Industrial-grade sanxan is used in enhanced oil recovery, drilling fluids, and concrete additives, with looser microbial and clarity specifications.

Regulatory Status
Sanxan Gum was approved as a new food additive in China in 2017 for use in jellies, dairy products, and meat products at specified maximum levels.
International authorisations are pending in most other markets. Food use outside China currently requires novel-food approval or use as a processing aid where permitted.
JECFA review has been initiated. Halal, Kosher, vegan, and non-GMO certifications exist from major Chinese suppliers.
Manufacturing Process
Sanxan is produced by submerged aerobic fermentation of Sphingomonas sanxanigenens on a glucose or sucrose medium with controlled nitrogen and trace minerals.
The fermentation runs at 28 to 32 °C for three to four days. The producing organism secretes sanxan into the broth, with viscosity rising sharply during the late phase.
After fermentation, the broth is pasteurised, then the gum is recovered by alcohol precipitation, dewatered, dried, and milled to specification. Clarified grades involve an additional hot filtration step before precipitation to remove cell debris.
Chinese fermentation manufacturers dominate the current commercial supply, with most production concentrated in Shandong and Jiangsu provinces.
