Sodium Saccharin Anhydrous
Sodium Saccharin Anhydrous is the water-free crystalline form of the sodium salt of saccharin. It is chemically identical to the dihydrate variant in its sweetening action, delivering 300 to 500 times the sweetness of sucrose, but it carries no water of crystallisation in the solid state.
The compound has the formula C₇H₄NNaO₃S and a molar mass of 205.16 g/mol, compared with 241.19 g/mol for the dihydrate. The roughly 15 percent reduction in molecular weight means that an anhydrous-basis dose delivers proportionally more sweetness equivalent per gram weighed out.
The anhydrous form is the preferred saccharin grade for dry-blend applications where moisture is undesirable. Dry beverage powders, instant tablet bases, effervescent formulations, and anhydrous tabletop sweetener sachets all benefit from the lower hygroscopic load and the higher dosing density per unit mass.

A granular grade with mean particle size of 100 to 300 micrometers improves flow on automated sachet-filling equipment and reduces dust during dry blending. Regulatory Status
Sodium saccharin anhydrous shares the regulatory framework of the dihydrate form. Both are the same chemical entity under food and pharmaceutical regulations, differing only in physical state.
In the European Union the substance carries the E number E954 under Regulation (EC) No 1333/2008, with use levels defined per food category in Annex II.
The U.S. Food and Drug Administration permits saccharin and its salts as a non-nutritive sweetener under 21 CFR 180.37. The National Toxicology Program removed saccharin from its Report on Carcinogens in 2000, and the Saccharin Notice Repeal Act of 2001 ended the previous warning-label requirement.
JECFA has evaluated saccharin and its salts and assigned acceptable status. Pharmacopoeial monographs for the anhydrous form appear in the United States Pharmacopeia (USP), the European Pharmacopoeia (Ph. Eur.), the British Pharmacopoeia (BP), and the Japanese Pharmacopoeia (JP). Halal and Kosher certifications are commonly available.
Manufacturing Process
Sodium saccharin anhydrous is produced through the same upstream synthesis as the dihydrate form, then dried under controlled conditions to drive off the water of crystallisation.
The Remsen-Fahlberg or Maumee process yields saccharin acid, which is neutralised with sodium hydroxide to form the sodium salt in aqueous solution. The dihydrate crystallises from this solution under standard cooling.
To obtain the anhydrous form, the dihydrate is dehydrated under vacuum or in a heated air stream at temperatures in the range of 110 to 140 degrees Celsius. The two water molecules are released and removed, leaving the anhydrous crystal structure intact.
The dried product is milled or granulated to the target particle-size distribution and screened. Packaging uses moisture-barrier liners to prevent rehydration during transport and storage, since the anhydrous form will slowly take up ambient moisture and revert toward the dihydrate at high relative humidity.
