Spicy Chili Flavoring
Spicy chilli flavouring is a concentrated preparation that delivers the pungency, aroma and colour of Capsicum in a standardised and particle free form. Its core is capsicum oleoresin, a solvent or carbon dioxide extract of dried chilli, around which a compounded flavouring is built with roasted chilli aroma, spice extracts and, in many grades, a savoury base.
Pungency comes from the capsaicinoids, principally capsaicin and dihydrocapsaicin, which together account for the great majority of the heat and act on a heat sensitive receptor rather than on a taste receptor, so the sensation is one of burning rather than of taste. These compounds are strongly lipophilic, extremely potent, and stable to heat, acid and prolonged cooking, which is why a chilli flavouring holds its effect through processes that destroy most aroma. Colour is carried separately by the carotenoids capsanthin and capsorubin, which are not pungent, and that is why paprika extract is sold for colour and capsicum extract for heat.
The product comes as an oil soluble concentrate in vegetable oil or propylene glycol, as a water dispersible emulsion for aqueous systems, and as a plated or spray dried powder for dry blends. Strength is quoted in Scoville heat units, which for a concentrate runs into the hundreds of thousands or millions, so it is dosed in parts per million and is handled with respiratory and skin protection at the point of manufacture.

Common Markets Grades
The primary grade specification is pungency, quoted either as capsaicinoid content by liquid chromatography or as Scoville heat units, with the two related by a fixed conversion. Standardised grades are traded at defined levels so that a formulator can dose to a target heat, and they are made by diluting a stronger extract with vegetable oil rather than by controlling the extraction. Colour is quoted separately as an ASTA value, since a grade selected for heat may be decolourised and a grade selected for colour may be almost free of pungency.
Carrier and format grades follow the target system. Oil soluble grades in vegetable oil go into fat phases, seasoning oils and fried products. Water dispersible grades are emulsified with polysorbate or a gum for brines, sauces and beverages, since the oleoresin alone will not disperse in water and will separate as a floating oil. Dry soluble grades are plated onto salt, dextrose or silicon dioxide, or spray dried onto a carbohydrate carrier, for snack and dry seasoning use. Compounded grades add roasted chilli aroma, smoke, garlic and savoury notes so that the flavouring carries character as well as heat, while pure extract grades supply heat alone.

Regulatory Status
Capsicum oleoresin and compounded chilli flavourings are flavourings rather than food additives and carry no E number. In the United States 21 CFR 182.10 and 182.20 list capsicum and its oleoresin as generally recognised as safe, and the FEMA GRAS programme further supports flavouring use. Where paprika oleoresin is used for its colouring effect rather than for flavour it falls instead under the colour additive regulations and must be declared as a colour rather than as a spice or flavouring, a distinction that turns on function rather than on the identity of the extract.
In the European Union these preparations are flavouring preparations under the flavourings framework, which governs their use and the conditions under which they may be declared natural, while paprika extract used as a colour is an additive with its own E number and defined maximum levels. Extraction solvent residues are separately regulated in both markets. The recurring compliance issue in this class is adulteration of chilli raw material with unauthorised azo dyes, principally the Sudan dyes and Rhodamine B, which are screened at import in both markets, alongside the aflatoxin and ochratoxin A limits and pesticide residue limits that apply to dried chilli. Manufacturing Process
Dried chilli pods of a selected variety are cleaned through destoners, sieves, magnets and optical sorters, deseeded where the specification requires it, and milled to an extraction grind that opens the tissue without generating so much fine material that the extraction bed blinds. The milled chilli is percolated with a food grade solvent, usually ethanol, acetone or hexane, or is extracted with supercritical carbon dioxide, which avoids solvent residues altogether and gives a cleaner aroma.
The miscella is filtered and taken to a falling film or wiped film evaporator, where the solvent is removed under vacuum at low temperature and recovered for reuse, and the residual solvent in the oleoresin is stripped to within the permitted limit. The crude oleoresin is analysed for capsaicinoid content and for colour, and is then standardised by blending batches and diluting with refined vegetable oil to the declared Scoville value. Decolourisation over adsorbent is applied where a heat grade with minimal colour is wanted. Compounded grades are blended with roasted chilli aroma and spice extracts, water dispersible grades are emulsified and homogenised, and dry grades are plated on a carrier or emulsified into a slurry and spray dried. Finished material is filtered and filled under nitrogen into lined containers.
