Thermal Reaction Chicken
Thermal reaction chicken flavour is a savoury flavouring created by heating chicken derived protein hydrolysates with reducing sugars and sulphur bearing amino acids, so that the cooked poultry aroma is generated inside the reactor by the Maillard reaction rather than assembled from isolated aroma chemicals.
Two chemistries combine in a chicken profile. The sulphur route, in which cysteine and thiamine react with xylose or ribose, produces the furanthiols and thiophenes responsible for the boiled and roasted meat character common to all meat flavours. The species identity comes from the lipid route, since controlled oxidation of chicken fat yields the unsaturated aldehydes, above all the decadienals, that the palate reads as poultry. Enzymatically hydrolysed chicken meat, chicken bone extract and yeast extract supply the amino acid pool and the savoury background.
It takes three forms: a yellow to brown paste in a chicken fat or vegetable oil carrier, a liquid, or a spray dried powder on maltodextrin, starch or salt. Paste grades disperse in fat and in emulsions, powders dissolve in hot water with agitation, and the aldehyde fraction that defines the profile is both volatile and oxidation sensitive, so the product is dosed late in a process and stored cool and sealed.

Common Markets Grades
Carrier and load define the main grades. Fat based pastes hold the highest concentration of reaction mass and are chosen where the finished food already contains an oil phase, such as an instant noodle oil sachet. Water based liquids suit brines, marinades and soup lines. Spray dried powders, typically at ten to thirty percent flavour load, cover dry seasoning, retail bouillon and coated snack applications, and encapsulated versions with a starch or gum arabic wall are specified where the aldehyde notes would otherwise oxidise during a long ambient shelf life.
Profile is the second axis, with boiled, roasted, grilled and fried chicken types produced from different reaction temperatures, fat loadings and precursor ratios, and a separate chicken fat only grade sold as an aroma modifier rather than a complete flavour. Producers distinguish natural types, built entirely from food materials so the flavour may be declared as natural in most markets, from nature identical types that carry isolated aroma chemicals added after the reaction. Halal certified versions are standard in this category, and vegetarian versions that reconstruct the profile from plant hydrolysates and vegetable fat are traded for meat analogue use.

Regulatory Status
In the United States a chicken reaction flavour is regulated as a flavouring rather than as a food additive, resting on the generally recognised as safe status of its components, most of which sit on the flavour industry GRAS lists maintained by the Flavour and Extract Manufacturers Association. Declaration follows 21 CFR 101.22, so a product built only from food materials and natural flavouring substances is labelled natural flavour, while one carrying synthetic aroma chemicals is labelled artificial flavour. Because the precursor stream is poultry tissue, the manufacturing and import of the meat derived fraction also falls under the poultry inspection regime administered by the Food Safety and Inspection Service, and hydrolysed protein is declared by its specific source name.
In the European Union thermal process flavourings form a defined category under Regulation (EC) No 1334/2008, which lists the starting materials permitted for their production, caps the reaction temperature with a corresponding time limit, sets a pH ceiling and fixes maximum levels for certain substances that can form during heating. A flavouring made from food materials inside those conditions needs no individual authorisation, while one produced outside them requires evaluation and listing. Chicken meat and fat used as precursors are products of animal origin, so the supplying establishment has to be approved under the hygiene package and consignments enter through a border control post. Manufacturing Process
Production begins with the preparation of the precursor stream. Mechanically separated chicken meat or bone residue is digested with proteases under controlled temperature and pH to release free amino acids and short peptides, and the enzyme is then inactivated by heat. In parallel, chicken fat is rendered, refined and in many processes lightly oxidised under air at moderate temperature to build the aldehyde fraction that carries the poultry character.
The hydrolysate is charged to a jacketed pressure reactor with a reducing sugar such as xylose or glucose, cysteine hydrochloride, thiamine, salt and part of the prepared fat. The pH is adjusted into the mildly acidic to neutral range and the batch is heated under pressure, generally between 100 and 130 degrees Celsius, for a holding period selected to reach the target profile while remaining inside the reaction conditions permitted for thermal process flavourings. The mass is cooled quickly to arrest browning, then the remaining fat, spice extracts and any isolated aroma chemicals are blended in. Paste and liquid grades are homogenised, standardised and filled, while powder grades are emulsified with a carrier and spray dried, sieved and packed, often under nitrogen.
